Instant Pot | Shredded Salsa Chicken

  • Hey guys!!
    It's been a while since I shared a recipe with you. If you don't have an instant pot, do yourself a favor and go get one, like now!! Instant pots make it so easy to prep dinner. I LOVE making chicken in mine. Here is a super easy recipe, 3 ingredients ya'll, THREE!! Ya can't beat that.
    Okay, here is what you need for the recipe:
    2-3 pounds of chicken (I used boneless tenders, they cook faster and very easy to shred)
    1 jar of your favorite salsa
    1 packet of taco seasoning
    1 cup water (I used chicken broth for additional flavor, but just as long as you have some kind of liquid)
    Directions:
    Place salsa, liquid, taco seasoning, and chicken in your instant pot. Give it a good stir. Turn instant pot on, close the lid and make sure valve is set to sealing. Cook on high pressure for 15 minutes. It will take 10 minutes or so to reach for pressure. Once timer is done, let the pot naturally release for 5 minutes. Once done, turn valve to venting to get the remainder of the steam out. Once all steam is released, turn pot off, remove lid, and remove chicken with tongs. Place in bowl and shred with forks. You could add additional liquid leftover to make the chicken juicy. Once shredded add to your favorite tacos, salads, or I made quesadilla's! Store any leftovers in air tight container in the fridge for up to 3-4 days.
    That's it! Perfect way to meal prep some of your protein for the week!

    Do you have to do natural release? Or is quick release okay too?

    Can I use frozen chx?

      Yes you could use frozen! I would do 25 minutes for 1 pound and let natural release for 15 minutes or so. I would add 5 minute cooking time per pound so if 2 pounds 30 minutes, 3 pounds 35 minutes and so on!

    SHE DID NOT THROW THAT JUICE OUT THAT WAS LEFT IN THE POT DID SHE ?..OMG REALLY ...I WOULD HAVE SAVED IT FOR THE LEFT OVERS.....DUHHHH
