Hey guys! My name is Anna, but people call me Annie! I’m a Registered Dietitian and love sharing my meal ideas and grocery hauls with you guys. High Protein Meals & Snacks | Healthy Easy Recipes
Veggie Egg Cups:
INGREDIENTS
10 large eggs
1 bell pepper, diced
1 cup mushrooms, diced
1/2 cup onion, diced
1 cup raw spinach, chopped
1 Tbsp Italian seasoning
1 Tsp garlic powder
1 Tsp onion powder
1 Tsp ground black pepper
DIRECTIONS
1. Preheat oven to 400 F. Line a 12
count muffin pan with silicone liners
or spray with non-stick cooking spray.
Set aside.
2. Prepare vegetables. Wash and chop
bell pepper and mushrooms. Peel and
dice onion. Chop raw spinach. Set
aside.
3. In a large 4 cup measuring cup or
mixing bowl crack 10 large eggs and
whisk. Add Italian seasoning, garlic
powder, onion powder, and ground
black pepper and whisk until blended.

Can I use frozen chx?
Yes you could use frozen! I would do 25 minutes for 1 pound and let natural release for 15 minutes or so. I would add 5 minute cooking time per pound so if 2 pounds 30 minutes, 3 pounds 35 minutes and so on!

Great haul! Going to Aldi tomorrow and definitely got some great ideas from you! Do you recommend avocado oil over olive oil?
Avocado oil is best for high heat temps to reduce oxidation( which cause Inflammation in our body) I always roast veggies with avocado oil because I am usually cooking at > 400°. Olive oil is still a great oil option for marinades, dressings, and lower temp cooking!
