I have the same pit boss. Little tip. Set it max heat, and put your pan right on top of the fire box in the smoker. Manually feed your auger and it will keep a constant flame at the bottom. Same idea of 5 minutes a side and you will have what you are looking for 🤙

I did 3 steaks in my vertical smoker yesterday for the first time. They were thin chucks I think, put them on the second rack from the bottom on the grate. Smoke setting for 2 hours and bumped it up to 225 for 45 mins. finished off on the BBQ for a sear. They turned out very tender and smoky, but slightly overcooked. Next time will be about 15 mins at 225 for thin steaks. Maybe 30 mins for a thick steak, but I'd definitely use the probe for a thick steak.

I mentioned in the beginning I was going to cook it about 5 mins a side. My smoker wasn't hot enough and I needed to cook it longer. You situation may vary but about 5 mins a side at 400 degrees.

I see you had your smoke cap pretty well screwed down. I cranked up my grill the other day to burn off after a cook and got an H2R read. You do a burn off or just a shut down? FYI: I have the series 3 like yours. Good looking steak.
Hey John! I'm may not understand your question. I usually turn the knob all the way to the left to "smoke" the last 5-10 minutes of the cook time. Then, hold the "on" button in till the digital numbers go out. 5 mins later the whole unit shuts off. After we're done eating the unit is usually cool enough to cover and put away. I hope that answers your question.
Patrick Sipperly does. I had a Series 5 Copperhead before. Sold it and got the 3 as it fits my needs better, living in an apartment wit a small patio. I the instruction book for the 5 it said to turn on high till it hits temp to burn off the excess grease etc. then to smoke for 5 minutes to stop pellets feeding in the firepower then Then push and hold till numbers shut off. The new manual says nothing about shutting the unit down. That’s why I asked is all. As an aside I did get a bottle of the PB cleaner. It does a real easy job on the door. I did a littl trick fro Louis Trim at R=Shack BBQ. I got a 4’ piece of 3/8” rebar cut into 3 shelf lengths and put that in the brackets. Got meat hooks from Gateway Pit Barrel Smokers and hang ribs. Thanks for the tips and videos. Oh yes. I have no room for the Austin XL but, I did get the Classic and added the side table to it. My little patio is pretty full. Thank you.

Will have to give this a try. Love cooking with cast iron, but wife complains when I smoke up the house with it. Hard to beat ribeye off the Blackstone griddle, but I like a light smoky flavor on steaks at times. Will experiment some. Thanks for the idea.

Would like to see a "How to Cook" with the vertical. And how easy or hard it is to maintain temp. I am interested in Buying one now. I would like to see you smoke a good size Brisket or say several Chicken Breast and if it can be done all at the same time? What about smoking a 10lbs turkey. Or even two 10 lb Turkeys.
