  • A foreigner tries filipino food at the Iconic Timplada Restaurant in Bacolod city. Chef Jarius at the ripe old age of 26 is killing it in the local food scene in Bacolod city. With his own updated approach and take on Filipino food as well maintaining classic Filipino dishes, you will not be disappointed. On my quest to find the best Filipino food I have to say that this young man is top 3 in all of the food I have tried in the Philippines over the last several months.

    KBL (Kadyos, Baboy and Langka). A soup filled with pork, chick peas, jackfruit and spices that hits the spot
    Chef Jairus makes a Thai staple and my favourite dish in the world, Pad Krapau. A minced pork and and Thai holy basil dish served over rice and sunny side up egg. His impressive skills made the spice levels perfect and it is the best pad Krapau I have had outside of Thailand
    Other dishes we try here are: Crispy Pata, Szechuan style spare ribs, crispy sinigang bangus, pork sisig, a unique twist on ensalada talong, and we finish up with a heavenly desert of stuffed sweet potato croquettes with ice cream and a vodka cocktail infused with a batwan puree

      Bacolod Inasal, Kansi, Batchoy and Molo soups are classics for me. I hope you can make a few more stops near there like "Breakthrough" in Iloilo City and the Scallops of Gigantes islands. Their seafood blew my mind!

      Agree, it's hard to validate the vlogger's reaction because they are all positives, but seeing how the chef knows his food really well, I can say the reaction was authentic. Kudos to the young chef! He totally presented Pinoy food at its best!

      @@rosietag1075, that is a very fair point as to my reaction and I am very glad you can see from the chef himself that the reactions were genuine.
      Now as far as my channel goes, I have on numerous occasions pointed out in my videos that if I film something and it is bad that I do not air it. Simple as that. This is how these businesses feed their families. They don't need some western vlogger crapping all over their business. Everybody has a bad day and that very well could be the case the day I show up. Feel free to follow along and if you are ever in the same city as me I will show you upwards of 80 hours of video that will never be published on my channel because the food wasn't good

      @@PureDetour Thats a good standpoint, I would probably do the same. They all want to make their money.
      Amazing restaurants and street vendors absolutely deserve a spotlight, but a standard street food vendor just needs to do his living anyways.
      If something is really bad because of catastrophic service or demeanor, I might would point it out in Google Map Reviews, yes, but if service is okay and food is average, I also would just leave it as it is, and just not publishing a video.
      But people like this chef deserve the praise, and as an encouragement for others to put passion in it

    I love this! Bacolod is becoming more and more renowned not onl for the typical inasal and pastries. But for having some of the best Filipino cuisine and the talent that comes from m hometown. One of the most popular chefs to come from Bacolod is Chef JP Anglo. He's got restaurants in Manila, Dubai and is getting recognized worldwide. He's a great ambassador for Filipino cuisine but so proud he hails from Bacolod. And oh my goodness, i miss having KBL. So damn good. I'm salivating watching this video. Can't wait to go nuts when I get to come home again.

    I'm not sure if the turnovers in your plate of pastries included Bacolod's famous Mango Tarts.
    If not, then you should try them. :) Look for the one's made by Virgie's.
    You should also try Piaya. It's flaky flatbread pastry stuffed with caramelized muscovado sugar.
    (NOTE: I'm not from Bacolod. But my former boss was from Bacolod and she'd always bring back Piaya and Mango Tarts to the office after a holiday.)

      I have heard since this that there are some in several islands. The difference so I am told is that Pinay has the ability to actually provide Kadios as a steady crop. Everywhere else it is not considered an agricultural crop

    nothing against thai food but if you really want to promote our culture, cuisine and country in general, you should cook and sell our own and be proud of it. it is where we are known passed by our ancestors to the future generations and not those foreign cuisines

      Totally fair point and I understand where you are coming from. As I have mentioned to another viewer, I have released 13 videos in the Philippines so far with many more to come. 11 of those features Filipino cuisine exclusively.
      Even in this video, the Szechuan ribs and the sambal are very much filipino inspired. The only dish that is genuinely of another country was the Pad Krapau and that is because Chef Jairus trained in Thailand for a bit. Everything else in this video is 100% Filipino.

    To say that Kadios seeds can only be found in Panay is a very big lie.
    You go to Samar you will find there common people on the mountains have Kadios plants on their backyards besides from their farmlands planted with Kadios.
    Sorry to label it as "very big lie" because the truth is Kadios are also cultivated in Samar. That is already a testament that Kadios could also be found in other regions.

      The chili here in the Philippines is not very hot. And I can tolerate a level of heat while still enjoying the food. I can't do the ridiculous levels of heat that burns your mouth off and you lose all sense of taste for 7 days. 😂

      Umm, outside of the Pad Krapau which one was not Filipino? And don't make yourself look foolish here. Szechuan style pork ribs are only a cooking technique. Chef Jairus' version is very much Filipino. So of every dish at Timplada and Quan .....1....I repeat again ONE was not Filipino.
      ONE dish out of probably 25 that were featured in the video was not Filipino. Heaven forbid🙄

      It is totally Filipino. KBL is an iconic dish from this region of the Visayas and is as much a Filipino staple here as bulalo or sinigang in other parts of the country. Crispy pata? Doesn't get any more Filipino than that. Grilled bangus? Yup, Filipino again. Even the "Szechuan" spare ribs are only a technique which Chef Jairus puts a Filipino spin on.

      I would like to point out a few things though. I have released 13 videos in the Philippines so far with many more to come. 11 of those feature Filipino food exclusively.
      At Timplada, chef Jairus does introduce a fusion flare to his cooking with both the sambal (with the base being Batwan which is Filipino) and Sezchuan ribs which is only a style of preparing the ribs. They are distinctly Filipino in flavour. I highly suggest you try them.
      As to the Pad Krapau, Chef Jairus trained in Thailand and has introduced his version of it that I think everybody should try.

    I don’t eat anything in the Philippines that my gf hasn’t cooked. The level of sanitation here is very low and with how vindictive the people can be it’s not worth changing it. You can barely go to Starbucks, McDonald’s, etc without having to deal with some unprofessional idiots.

      To each his own, but I have traveled extensively for the last 25 years and full time for the last two years pretty much in the name of food. I have eaten what most westerners would consider God awful unsanitary shit. Still to date the only time I have ever had food poisoning in my life was in Canada.
      I have been in the Philippines for the last 4 months in multiple cities and have eaten, what once again, westerners would consider vile and never had a single issue.
      Lastly, you won't see me walking into a Starbucks or McDonalds in North America, let alone anywhere I travel in the world.

      @@PureDetour I have traveled the world since 1998 and full time for the last several years as well. I have gotten sick in only a few of the sixty four countries i have been to. Philippines, Cambodia, Mexico, and the states. I spent many years in food service industry and my knowledge in sanitation prevents me from trusting these degenerate people. I can tell from the way they conduct themselves in the restaurant that they are way worse in the kitchen. I’m not going to travel the world to eat garbage to impress people I don’t know. All I can say is that one day it will bite you in the butt and you will be wishing you weren’t so careless.
