    Usé leche pasteurizada entera común, y si salió. Hay que esperar un poco entre paso y paso; no es continuo como muestra el video. Agregé más jugo de 2 limones y volví a calentar para que cuaje, sin dejar hervir. Luego se tamiza todo por una tela fina. Así queda el queso. Esperar para que se seque muy bien. Luego se pone a calentar el suero. Si va seguido se vuelve a unir el suero con el queso porque se disuelve. Si pasa eso, volver a tamizar, formar bola de queso otra vez y dejar secar muy bien.

      Al fin he buscado en todo yoube a alguien que ocupar leche entera y le hubiera resultado. Un poco más trabajado pero ojalá me resulte a mi. Enchiladas por ley no se comercializa leche cruda.

    Und nun mein LOB nach meine Kritik der Essigsuche.
    Ich habe heute morgen frische Milch vom Bauern geholt und den Mozzarella wie hier gezeigt gemacht. Ich möchte nur sagen EXZELLENT. Es war super einfach und schmeckt hervorragend. Habe es gleich mit Tomate, Basilikum, frischen Pfeffer, Olivenöl und ein paar Tropfen Aceto Balsamico zum Frühstück gegessen. Vielen lieben DANK für das Rezept.

      Not an expert, but either dilute it slightly with water or use slightly less. I doubt the 10% would cause any problems anyway if you just used it as it. Good Luck!

      Hope you have better luck than I did! I’ve tried to make home made mozzarella four times, and each time it never began to curd anything like the videos show. It was all a waste. I followed the instructions exactly each time. Good luck to you.

      O que estou achando estranho é a emulsão e a elasticidade da massa.....costumo usar está técnica com o leite pra fazer ricota e requeijão mas a massa fica fragmentada ,é necessário passar pelo coado e compactar ....nao fica assim , instantaneamente....

    Questions: 1 - do you add the vinegar in stages because that is the process? OR were you looking for a consistency and had to add as you went along?
    2 - How long will the cheese keep? Do you store it in the whey or salted water? (I'm guessing 7 days??)
    3 - Any uses for the whey/liquid left over?
    4 - Homemade milk: I cannot get unpasteurized milk. Is whole milk (3.25% fat) from the store ok? OR do I have to also add cream? (I can get 10% or 35% fat cream)

      From another videos/recipies/experience:
      1: Vinegar should be added slowly while stirring milk. This way the curd will not get grained (as for home cheese)
      3: For making bread or watering plants. :)
      4: Pasteurized whole milk is ok as long as it's not homogenized.

      Το μόνο που δεν είναι η μοτσαρελα αλλά η σουλουγούνη . Η μοτσαρέλα παράγεται από το βουβαλίσιο γάλα .

      @@uVxxdCnt το νερό εί άι στους 70 βαθμους όχι κρύο...Μόλις.την πιεσεις πολυβόλα για να αποβάλει όλο το εσωτερικό. Νερό που έχει και γίνει σαν τσίχλα τότε την βάζεις σε νερό με παγάκια για 1 λεπτό

    I have never seen 9% vinegar here in Canada. During the canning season you can sometimes find 7%, the usual is 5%.

      Go to a restaurant. Ask in the kitchen. They give you 15 % . For their customers they will mix it with water. Or they do the cleaning with it

    FYI you can use pasteurized whole milk just fine. Or you can even use skim or 2% milk if you add some butter or cream to boost the fat content. I've made my own mozzarella a few times like this. It's not cost effective at all, it's way cheaper to just buy a block of cheese. But as a hobby or something it's not super expensive! Ultra-pasteurized milk does NOT work however, that extreme amount of heat alters the protein in milk and the curd doesn't hold together. You can kind of get a loose ricotta texture and that's about it.

      @@georgestam1710 you can use vinegar instead of rennet but the acidic flavor does carry over. You don't need much vinegar so it's not like it'll taste super strong, but it is a little sharper than rennet based cheese. (edit) If you use that mozzarella to make pizza you won't even notice, the acidity of the tomato-based sauce will completely cover for it. But if you used the mozzarella by itself just as a snack or something you would probably notice.

      There are countries in the world where mozzarella is expensive and homemade milk is cheap or many people have cows, like in my country, so it's almost free to make your own cheese.

      @@teemrahb7612 yes, normally you would lower pH with bacteria E.g. yoghurt, then make it coagulate with rennet at pH 5,2 +/-.
      In this video she made it coagulate by pH alone which would be pH 4,5. to call this mozzarella is quite the stretch.

    Love it, will try this too. Manufacturers here in the states add saw dust to their grated cheese so it will not stick in the bags for sale. Going to do this and eliminate saw dust from my diet. Amazon, car hop trays.

    Since I don't have my own cows and unpasteurized milk is so expensive and most milk is now over pasteurized. I will have to pass on this.

      Yeah, I didn't realize it until you mentioned. I don't think I know anywhere where I can get that, as far as I know there's only pasteurised milk in stores...

    Can I use lemon juice instead of vinegar?
    Don’t think in USA possible to buy 9%.

      You can use lemon juice but the acid concentration is not predictable, so using white vinegar is preferable. I don't know what the concentration I use is, but it works just fine, and I'm in the US. I use less vinegar than this lady. Be adventurous.

    Where do you get vinegar 9%? Vinegar used as food in the US is 5% acidity. Cleaning vinegar is 6% acidity. I've never seen vinegar with 9% acidity.

      Maybe if you could google it? Coles here in Australia apparently stocks "double strength" vinegar but it's at 8% acetic acid, not 9%, could probably adjust the recipe to see if it works.

      I live in Sweden and the vinegar here is 12%.
      It’s the perfect strength.
      When we makes pickles the recipe is 1dl water, 1dl vinegar, 1/2dl sugar. Super easy and you don’t need to buy as big bottles :)
      Oh yeah stores also have 24%, but 12% is more frequently used.

    друзья,те кто из России,наше молоко из супермаркетов не свёртывается!!!так как в нашем молоке нет молока!!!можно бухнуть хоть литр уксуса но оно сцука не свернётся!!!

      ясно написано в видео, домашнее молоко которое сдоили с коровы, с магазинным не получится, я лично пробовала и с магазинным и с домашним молоком в которое добавили воду, не получилось, потом пошли прямо у соседки купили молоко свежее домашнее настоящее молоко и сразу получилось
