I do these on my pellet smoker. I have also done them in the oven. I get a cookie sheet with a wire cooling rack to catch the grease. I spray the cooling rack with some Pam to make clean up easier. For Thanksgiving I used some Smoked Turkey and some Cranberry sauce.
Hussey, I'm making jalapeno Popper Sammiches today long with a brisket , ribs and a beer cheese sauce Mac n Cheese. Love me some good groceries like these poppers !

If you want to try a different spice blend, try Everglades Seasoning. They make several options - I use the original. Good mix of garlic, pepper, onion, etc. Used it in the cheese in poppers last weekend.

ATB(atomic Buffalo turds), or jalapeño poppers, poppers, many many recipes on RUclips, what I’ve learned is get some cheap thin sliced bacon, slice the jalapeño in half lengthwise remove the membrane and seeds, stuff and wrap. So if you have 5 jalapeño (because you sliced them in half you now have 10 poppers). Fire up you green egg to 250, with some smoke wood and the deflector plate. Run them for about an hour or two, also get the pimento cheese that’s already made in the tub, is good too especially if you’re in a hurry. The sky is the limit you can do whatever or however you wanna do it. I usually cook 50-75 poppers at a time and seems like it’s never enough, on my pellet grill. By removing the seeds and membrane is kid friendly and grandma approved, and they’ll all ask for them every time. Search Wolfe pit, Larry Wolfe has some great recipes, and that’s where I got all this knowledge about them, and make it your own. God Bless.

Down here in Texas we put our own twist on jalapeño poppers the called Texas TwinkiesA buddy of mine he puts brisket put brisket inside of a jalapeño cream cheese wrapped it in bacon and throws it on the smoker and that’s how he got the name Texas Twinkies

What oil if any do you use on the cooking surface? Seems like I'm cook to hot or wrong oil and items tend to stick or not cook so well.
For this I didnt't use any, just the bacon grease. Usually I use avacado oil or olive oil/canola blend.
Is there a larger pepper that would be good to do that with ? I'd like to try it stuffed with boudin and pepper jack cheese.
I bet a poblano Pepper would work.
I’ve done this with large banana peppers before and they’re great. Poblano like Amy noted would be good too.
We have a griddle (without the cover) and tried grilling these but the bacon was sticking to the griddle.. Any recommendations??

I microwave my bacon for 1 to 2 minutes , then I wrap mine , give that bacon a head start
If I use shrimp, I pre-cook so the shrimp doesn't overcook.
Put toothpicks threw them and the bacon stays on..keep griddleing brother
Yeah, you can. If you use thinner bacon, and tuck in the ends, you don’t have to use toothpicks.
