How to Make Roast Beef in a Weber Kettle

    I was up all night last night smoking two briskets that seem to me to be perfect.
    I told everybody that this coming year I'm taking 2023 off from lighting the fire box at 7 PM the night before and wake up every 2 hours from 10 PM till it's time to take the meat off the smoker.
    It's hits a bit different when you're in your 50s.
    It was windy last night so it wasn't an easy cook but anyone who smokes meat and lives on a coast can understand.
    Oh well at least I got to take a good nap this afternoon.
    And who am I kidding?
    Ask me on the third of July what'll be served here on the 4th!!

    Happy New Year! Like you I like a sirloin, but that cut after you cooked it looked scrummy! Doing the veg whilst resting the meat is a great idea. Thank you.

    Love your work.... and now I'm starving.... I have a question, I don't know whether you'll get to see it but I have to cook 2 legs of lamb in one Webber. I typically cook 1 hour per kilo for a single leg... I'm not sure what time to plan for.... I imagine that two legs will absorb more heat of course.... but I can't imagine that it will be twice the time.... do you or anyone else here know? Cheers for the help!

    what advice would you give if I wanted to cook beef and pork at the same time; can it be done? My other option is to cook one on a charcoal rotisserie and one in the Weber. Cheers

    Can you please do a cubed roll ? I get them here in nz and I trim it all up and follow the natural seams of the cut, I get like 3 different cuts, and I don't really know what I'm doing lol. Please help. Love ya vids mate

    Is there any point to smoking a roast like this at a low temp like 140 celius over a longer time? my butcher said to wrap in foil for most of cook if your cut is really lean and then take foil off for last 30 minutes. What are your thoughts?
