I came across your channel, purely by chance, just two weeks ago, and have been binge watching ever since. Now living in Indonesia these regional recipes, for a foodie in exile, have brought back so many taste memories, for which I thank you, most profusely. I am in correspondence with HY about importing the 24l Sapientia into Indonesia and am hammering the fact that it has been solely due to watching your live use of it on your channel that has convinced me that it is the best air fryer oven on the market, as your heartfelt enthusiasm for their product makes you their top salesman 😂
A lot of these recipes, like this one, corned beef rissoles, Woolton pie, Friday pie, and so on, are not only tasty but very inexpensive. Great for these tough times.

Traditional Scottish Pie, the football supporter's best friend, is made with hot water pastry. The bakers just carried on using the same pastry for the Macaroni pie. Just made sense.
I made hot pastry once for a pie, and it turned out very well. It's a bit tricky getting it to stay round, but I just used large jars because I didn't have the right tins until it set, and it worked. The family loved them.
What a wonderful recipe, I’m going to make it tomorrow to take it to a friend who is nursing a broken knee. I will definitely add some shallots and maybe some shrimp in there as well. it could be made with so many variations. Thank you for all your wonderful ideas. My grand dad was Scottish , but my mom never made this kind of pie.

Yes indeed, Rick. I used to buy them from the butchers when I went to visit my Mum. It was a Scotch Pie with mashed potato on top with baked beans in the centre. It was a hot water pastry. With her getting older, her appetite wasn't as good. Great for lunch or dinner. Your pastry is amazing. Thank you very much.
I like your style of cooking, changing things up to your taste/mood and by you making it like this it opens up ideas to do other things. Once you have a shell, can experiment with different flavors/textures.

Looks brilliant. I had my first (and only) one of these on a trip to the Outer Hebrides in our campervan May 2022. We spent a couple of nights on Skye and went to a local bakey one lunchtime and bought an assortment of pastries - one of which was a Macaroni cheese pie. It was lovely stood looking over the harbour with our Labrador eating this. I know it's carbs on top of carbs but once in a while :)

OMG those look fantastic! I always slice tomatoes on top of my Mac & cheese. It cuts the richness & adds great flavor. I HATE making pastry & refuse to do it anymore now they have store bought options. It boggles my mind the way you make it with such ease like it’s no big deal(it IS) & it’s perfect every time! I’d kill to make it like you, but I’ve no patience for the mixing.

Thats next on my list to bake Rik in my new hysapientia air fryer oven. They look fab. Yes, i might put onions in too. Thank you. I attempted to copy your rotisserie chicken in the air fryer but i was about 1.46Kg and was too large to turn properly. Ill try slightly smaller next time. I didnt know how to tie legs together either in case the string caught fire. Everyone out there....this hysapientia air fryer is the dogs doodas. 😂 I dont think a one with pull out drawers would suit my type of baking and cooking. Thank you so much for introducing me to it via your videos.

So funny, just watched this after eating Tuna, cheese, and macaroni (not in a pie crust though) for dinner. I make this regularly and our kids used to think it was fabulous. Nowadays there is only my Husband and myself we divide into three and freeze two. Lovely food, cheap cheerful, and tasty. It also has onions and capsicum (peppers in the UK). Sometimes we swap the capsicum out and have peas or broccoli - depends on what we have in. Good cooking Rik. xx

Only ever seen them with hot water pastry, every bakery in Scotland sells these as they’re very popular, not something I ever crave . I do however love hot water pastry Rhubarb pies ! Popular in the west coast Scotland pie land 🤣 nice one again Rik 👍👍
My very first full-time job after leaving school, was in the bake house of a ferry company in Scotland. Where one of my main roles was forging the pie shells for Scotch Pies by using a heated which moulded and blind baked them one at a time for hours on end.
@@Rachel-gd7mx luckily I was only in that particular role for about two or three weeks before I was transferred over to working in the tea room on the ferries, so I wasn’t doing it long enough to get bored…I had also already been a vegetarian for a few years by that point and at that time (back in the nineties) you couldn’t get vegetarian Scotch Pies and most cheese wasn’t vegetarian, so the pies weren’t too much of an issue really. 😊
@@Rachel-gd7mx it was a lot of fun, early starts, a cabin on the boat and late nights drinking and having pub crawls with the rest of the crew…and only working half the week. Happy days indeed 😊
Do I like it? No I love it. Just think if you made these in little tins for your kids and taught them to eat this instead of the stuff out of the blue box. You would have a much healthier child and the way that Rick did. It is brilliant and that also provides a lot of protein. Just terrific! It also made me glad that I have macaroni and cheese which I made earlier this week in my refrigerator because I'm definitely going to have to have some now. 😊 You know I live in West Virginia in the United States and we like Spam. We like spam and eggs and spam sandwiches. And oh some tiny little pieces of spam. Diced through here would just be fantastic, especially if you use the kind with jalapenos.❤

@@BackyardChef I messed the crust up. I made a mistake in converting the shortening into cups. I seems I added way too much and was very wet. Added some flour and then it was too dry and kept splitting apart. I finally pieced a crust together but I was kind of blah in the flavor. The macaroni was very tasty though. Will have to try it again in the future.
I'm thinking maybe a small amount of diced ham and green peppers. Though I would be hard pressed to fill my precious pastry shells with this, it would be an impressive side dish if you were having company for dinner. Mac and cheese deluxe :) Thanks Rik.
Next time add a good amount of braised cubes of smoked bacon and the already mentioned diced shallotts to the mix. I guess you'll like that too. 🤤 Greetings from Germany!

So funny, just watched this after eating Tuna, cheese, and macaroni (not in a pie crust though) for dinner. I make this regularly and our kids used to think it was fabulous. Nowadays there is only my Husband and myself we divide into three and freeze two. Lovely food, cheap cheerful, and tasty. It also has onions and capsicum (peppers in the UK). Sometimes we swap the capsicum out and have peas or broccoli - depends on what we have in. Good cooking Rik. xx

My very first full-time job after leaving school, was in the bake house of a ferry company in Scotland. Where one of my main roles was forging the pie shells for Scotch Pies by using a heated which moulded and blind baked them one at a time for hours on end.
How long before you could look at a pie when u left 🤔🤣
@@Rachel-gd7mx luckily I was only in that particular role for about two or three weeks before I was transferred over to working in the tea room on the ferries, so I wasn’t doing it long enough to get bored…I had also already been a vegetarian for a few years by that point and at that time (back in the nineties) you couldn’t get vegetarian Scotch Pies and most cheese wasn’t vegetarian, so the pies weren’t too much of an issue really. 😊

Just think if you made these in little tins for your kids and taught them to eat this instead of the stuff out of the blue box. You would have a much healthier child and the way that Rick did. It is brilliant and that also provides a lot of protein.

@@BackyardChef I messed the crust up. I made a mistake in converting the shortening into cups. I seems I added way too much and was very wet. Added some flour and then it was too dry and kept splitting apart. I finally pieced a crust together but I was kind of blah in the flavor. The macaroni was very tasty though. Will have to try it again in the future.

I always put dry mustard in my macroni and cheese. I didn't realize other people do the same.When my kids were little, I would chop ham and put it in.@@BackyardChef
Hi Rik, I've just made the Mac& Cheese Pie and WOW we loved it.
I did put extra cheese and seasoning in and mixed breadcrumbs with cheese for the topping.
