The Slow & Sear for the 22.5 inch Weber Kettle Grill has a built in Water Reservoir which holds almost a 1/2 gallon of HOT Water , so another pot or pan of water is not required or needed !
Never attempted lownslow on my jumbo joe. Just figured it.be too cramped for ribs. Really surprised how you manage to fit them in. I might have to try this myself now! Maybe cutting a rib or two off the end might make things a little less cramped. Great job!

Is the actual grilling grate 18 inches across? I bought a SnS Travel Kettle and I want to use my 18 inch grates but the SnS Travel Kettle measures just over 17 inches. I can't even close the lid on the Travel Kettle when I put an actual 18 inch grate. If the Jumbo Joe grate is actually 18 inches, I'm dumping the Travel Kettle.

Good Video, I thought you were going to take water pan off fire with your bare hands, If you did you would have been my hero. I did like innovative way to infuse moisture into meat, Ribs looked great. I have question as to how you would cook marinated chicken aka store bought terriaki chicken marinade that is messy. On a weber 22 would you use weber baskets cook indirect then possible bring baskets together to sear. Or indirect with slow and sear. I have both but I have just started the bbq journey.
I've accidentally grabbed hot cast iron handles so many times. Luckily I didn't do it here. :) Either one of those ways should work okay for the chicken.
OK, that settles it, I gotta get me some pig ribs. Got some new seasonings from Heaven Made Products that would be great on ribs. If Annie likes it, they must be good...
A small Weber and not fancy stuff and it looks and I think it feels better than the fancy recipe that I always follow.
So now I know I can cook ribs on the Jumbo Joe!! I just bought one a few weeks ago. I've only cooked poppers and wings on it so far. Thanks!

For these added thermomether, do you use a grommet or some kind of base so the probe goes in?
No, I just inserted the thermometer and tightened the nut that comes with it.

I added the thermometer myself.
If you would have wrapped them in aluminal foil half way done they would have been super tender
