My man’s got the Ultra Heavy Duty aluminum disposable roasting pans. I feel like mine promptly fold right in half as soon as I pick it up to throw in the oven.
Fun fact: I actually had this happen to me. Yep. Spaghetti. HOT spaghetti. We were moving them to the serving table. Needless to say, that outfit didn’t make it😩😂 I have since double trayed EVERYTHING!!

Kitchen tip: keep a small bowl/ ramekin nearby when making soups/ liquids you want to keep taste testing. With your mixing spoon, put some into the bowl to taste test! Saves you from burning your mouth and from putting the mixing spoon in your mouth then back into the liquid 😅
It’s fine. The high heat will remove bacteria, and the oven will as well. This is being done all over the world. It’s only in the 2000’s that people react badly to it, and especially people in the US…

I've worked multiple stations in a bunch of restaurants, so I have big respect for proper kitchen hygiene practices. There's a reason that Food Safety officials do inspections and update their guidelines. Also people starting to complain in the 2000s was likely due to all the publicly accessible research that outlines the dangers. 1. You cannot and should not rely on high heat to kill bacteria, as not everything is killed by high heat. 2. You also have to consider the combination of uneven heat distribution and bacteria's love of warm environments for rapid growth. Think of soup for example, if you have it on high, and you see a soup skin forming on top, that is an example of areas of the dish that are now protected from high heat. Quite a few cooking methods and recipes will not have high enough heat throughout the entire dish again after taste testing. 3. You also have to consider allergens being transferred from tasting multiple things. It's just good practice to have safe food preparations, so that you don't accidentally introduce bacteria/allergens into foods you prepare for others. And so that you don't look like an animal if you're ever prepping food at another's home.

Top chefs have done this, and still do. Why? Because tons of studies, if you believe them, back up that at a certain degree, all harmful bacteria will be destroyed. And at boiling, nothing will be left. I mean it’s good that restaurants now use tasting spoons, etc, so that clean hygiene is a common practice. But tasting with the same spoon over and over, vs tasting spoons, is the same thing as using gloves, vs not using gloves when preparing food. Heat kills bacteria, and good hand hygiene prevents bacteria. Gloves is good if you keep changing them and washing your hands in between, as sweat builds up and bacteria can form. Honestly, I wouldn’t mind if a chef did a finger taste or a double dip with a spoon. But I’m a 90’s kid, I basically grew up with a good immune system and all that. Personally, I double dip, but I don’t cook for others.

My problem is the opposite because I live alone for the first time in my life. I grew up learning to cook from my gma for large family gatherings and generally at least 5-8 people, then cooked for large groups at a veterans hall and brought home leftovers to my roommates, then lived communally and did the same. Now I struggle with how much because I tend to not want to eat the same thing 5 days in a row. Love your videos!

You’re spot on by saying cooking for a larger set of people isn’t easy bc you can’t directly scale the process. To achieve the same consistency and flavor you can’t just multiply the amount of each component by the number of guests. Also cooking time for the individual components increases AND the flavor and consistency or texture changes with the amount of food you cook, bake or fry in one dish.

I think that many people do not know that cooking with clay or stone, away from aluminum and iron, will bring out delicious and beautiful flavors and that it does not spoil the taste of meat, chicken, fish, or even vegetables. I suggest everyone try it and I guarantee you a delicious and unforgettable meal.
I wish more people used the technique of making rice using the broth you made your protein with, it’s really underrrated how well of a pairing the rice becomes
As a 21 year old (first daughter) who also cooks for her entire family and relatives, I can confirm what he just said is so true and so right. Every ingredient and spice has to be perfect according to that big portion size and if someone says they do not like it, ..... oh the blasphemy of your dish being disliked by someone ..... it truly hurts your soul more than the person who doesn't like it. BTW I'm a killer cook and confidently knows how to do my job properly ALHAMDULILLAH ❤️. People often berate us cooks and says, "this is the easiest job in the world", they do not really realize how much of a tough job it is to do and how many sweats we break when we cook for so many people and it has to be perfect all the time.(and mind you I have a really big party of relatives and my own family is a family of 6 including me). It is one of the most stressful job in the world.
