Spinach and Strawberry Salad - This is the perfect time of year to just load up on veggies, and some of the most delicious are leafy greens. We adore spinach, and a fresh spinach salad loaded with bright, sweet strawberries is just about the best. With veggies at their best, beautiful spinach with a strawbverry on top is icing on the cake. Loaded wtih flavor and bright crunchy vegetables, it's delicious and good for you too. Perfect all around!

Ingredients:
4 tablespoons of olive oil
3 tablespoons of balsamic vinegar
1 tablespoon of Dijon mustard
1 teaspoon of black pepper
1 teaspoon of kosher salt
1 tablespoon of poppy seeds
3 tablespoons of honey
1/3 cup of crumbled feta cheese
1 pound of strawberries, sliced
1/2 red onion, sliced
10-12 ounces of baby spinach, washed and dried
Instructions:
In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, black pepper, kosher salt, poppy seeds, and honey to make the poppy seed dressing.
Place the crumbled feta cheese in a large bowl.
Add the baby spinach to the large bowl with the feta cheese.
Add the sliced red onion to the large bowl with the spinach and feta cheese.
Pour the poppy seed dressing over the spinach mixture and toss to coat.
Add the sliced strawberries to the salad and gently toss to combine.
Serve the salad immediately.

Dijon mustard mixed with vinegar add garlic and it’s a yummy dressing
