    From my grandma's kitchen in eastern NC, fresh creamed corn in a bowl......then lay on top a few slices of tomato that have been sitting in vinegar, salt, pepper and a little sugar. Nothing better!!!

    Oh I remember that corn cutter my parents had one. We would dedicate an entire day to canning corn niblet and creamed. Dad would get up early and pick gunny sacks full then we would husk and prepare as a family. Always a long hot day in the kitchen. At 80 enjoy the memories you bring out of a country life.

    This looked soooo good! Loved the interaction with Theresa and the family. These are the best cooking videos. Not so manufactured. Paula seemed tired that day. She made a lot of videos that same day so understandable!

    I am up early in California and I am excited first to comment! We love cream corn here, in your corn casserole or with fried chicken. Thank you wonderful amazing Paula for your company! Yes, I microwave corn on cobb, then cut off cobb. With husk on and silk falls off after cooking about a minute per corn. Never seen this tool before. Thank you! We love you and your family! All quarantine recipes would be great cookbook!

    I love my fried corn in cast iron. Fried green tomatoes. Fresh half runners with new potatoes. Sliced red tomatoes a chunk of onion n cucumbers. And cornbread. THAT I could eat several times a week. 😁😁😁😁😁😁😁😁😁😁😁

    Good Morning my friends..love creamed corn. I have put up so much corn this year...I have a deep freeze full. Peach's and cream yum Paula. I just use a knife and a bowl it's easier for me . I have tried one them wood corn cutters it's not to easy to me. Hope all you guys have a great Monday love you all ♥️💓

    I'm a California girl and my mamoe lived in Tennessee. When I would go visit her she always had a big ole pan of fresh made creamed corn waiting for me. That and chicken and dumplins. Oh my goodness I sure miss her and all the good things she cooked.

    Morning Paula. Im a yankee. Moved to the south when I was 21. An elderly neighbor lady taught me how to cut corn from the cob and "milk" the cob . She also taught me how to make biscuits, fried okra and sweet potatoes and bake a , sock it to me cake and fried apple pies. Another lady did her laundry in a big black cast iron tub full of boiling water over a wood fire. Such great memories. Keep on cookin Paula. Hugs and love.

    The whole kitchen seemed like a mess when Momma and Daddy were putting up corn. My job was scraping the corncob after they had run it down that awful cutter. But, that was the best corn ever. My daddy could grow some of the best in East Texas, and we put it up in the freezer every year. Wonderful memories... ⚡️💖⚡️

      Did they use the wooden one, like Paula, OR, a stainless steel cutter?
      I have never heard of, nor seen a cutter like that! Brilliant idea by a brilliant person!! 🌽🌽 But, I keep thinking that the blade(s) are gonna' get dull pretty quickly. Thoughts? 😃

      So, people who spend their entire lives living down south need to 'fake' their southern accent. You shouldn't waste your time spreading negative, ugly statements, second-hand rumors.

    My mom would use a knife going down the corn. She would use bacon grease or a little oil to fry the cream corn to start. Then add butter, salt & pepper and a little milk with a dab of sugar. Best fresh creamed corn ever.♥️🌽😋🥰

    A few years ago we used an electric drill with a screw to run in the cob and used a hand squeezed corn cutter over 250 cobs of merit corn in less than 30 minutes ended up with a 5 gallon bucket of creamed corn.

    I love cream corn by itself but my mother used to bake it with butter and crushed crackers on top. Loved it too! Nothing better than cooking some frozen homegrown corn when the snow is blowing outside and you’re warm and cozy inside. Mmmmmmmmm mmmmmmmm!!!

    We have the most amazing corn here in Wisconsin. My son's former teacher helps run his family farm. He has let up come out and pick corn. I used a bundt cake pan and after par boiling and dropping in ice water i stand it up on the hole and use a knife to slice it off the cob. All the corn drops into the pan. I freeze it for winter recipes so I get to have that amazing corn all year long! I will definitely have to try this amazing creamed corn too! Thank you Paula!!

    The best corn I've had is from southern Michigan, and northern Indiana. I also wanted to thank you for helping me learn how to cook years ago! It's great to see you so relaxed all these later. Stay safe, and healthy.

    No matter where it's grown, if it's fresh, corn is naturally sweet. Long Island, NY and South Carolina Silver Queen is fabulous too! I never took to creamed corn, but my husband has. Thanks for the recipe.

    You should put a wet dish cloth under your cookie sheet and it won't slip around. Also fold the cloth to make it thick.

      @@madamegina2629 It is good. I also get regular corn, not creamed, and fry it in butter with a little salt and pepper. I cover it with a lid stirring it now and then. I fry it until it gets dark golden bits all over the corn but doesn't dry out. My adult kids can't eat enough of it when they come over for a dinner. LOL

    Yes! Bubba was right! Missouri corn can't be beat, IMO. We buy ours from the Amish because it's GMO free and pesticide free. Thank goodness for real farmers! ❤

      I love Olathe corn. Last year i bought several bushels from a vegetable stand here in Houston and my sister and i blanched the ears, cut the corn off the cob, bagged it and we each put about 24 qt bags in our freezer. My uncle (in Illinois) planted acres of sweet corn and all his sisters and neices spent tge entire day putting up corn. Several wagons full. Such a good time.

    Melt butter in black iron skillet, add corn (fresh or frozen) to pan, bake, stirring occasionally, add salt and black pepper to taste. It is delicious! We use to get a pick-up truck load of corn and put it up in the freezer every year. Worth the effort.

    I like to eat grits. Some people put a little bit of sugar in theirs, and I've done that a few times. But I love lots of black pepper and cheese (American or cheddar) in mine. Makes it really creamy and yummy.

    I love creamed corn too !! Paula , I remember all of my Grandmother's and my mama making their creamed corn like your mama did . I also remember them using a cheese grater to cut all of that goodness off the cob . Of course , I've made it that way too . I'm gonna try it in the microwave next time .     P.S. I have a question . Have y'all ever ate at Charlie Williams restaurant that's over near Athens Ga . ? I don't think they're still opened anymore . Someone told me that your restaurants keep serving you until you tell them you are done . That reminded me of Charlie Williams , because I remember that's how they served you as well . It was mostly seafood and It sure was good . Unfortunately , I'm sad to say I haven't ever gotten the chance to eat at one of your restaurants "YET" . Hopefully someday I'll get to . ❤🙏🙏🙏😢

    You don’t need a contraption like that. Just a very sharp knife & cut it just off top the kernels then rake the cob. About 45 seconds per cob. Easy job. Just time consuming when you put away dozenS for the winter. I just finished mine! 🥰

    My husband was coming back from Ft Benning and got the entire truckbed (longbed) filled with silver queen. I creamed 80% of it by hand. My kids hated me making them help Schuck that amount! I loved it!

    I use to eat as a child gritted bread made with 12 ears corn, flour, sugar, etc can remember all. Lady that made it for me has been gone many years .

    The most genetically modified food is corn (especially in the US). If you get heirloom seeds and grow those, they may not end up being as genetically modified, but I simply don't trust it and do not eat it...but thank you so much for the recipe Paula. Monsanto is out in MO.

    I was raised on field corn and it was delicious! After we cut it off the Cobb and got the milk out we would put it in a cast iron skillet and add salt, pepper, and butter. We can’t get it anymore but it was the best.

    I have a vintage corn cutter like that, was in original box, from a yard sale few years ago. I still rather put up corn using a sharp paring knife and a long cake pan. Of course white sheets on the floor and kitchen are a must cause corn sure sprays everywhere. I remember taking over corn from mama and then dreading corn season. Now that daddy is elderly, I can’t believe I miss corn! End of an era that makes me sad. Always ready here in NC around July 4th. One time I forgot to
    Close freezer locker and mama lost 64 quarts and cried and cried. I was a child and never realized until I took over the chore how devastated I’d be if that happened. Daddy used silver queen, Seneca chief and lastly he loved the peaches and cream variety. Thank goodness we always grew extra things for neighbors so now they bring us extra. Fresh corn has nothing on frozen or canned. Love it with a touch of bacon grease and tiny bit of flour. Just the way my gma made it! Love u Paula!

    Paula, I do the same. We raise corn each year.....silver queen. I use the microwave to fix mine for freezer as well. Everyone loves my corn... I use microwave to cook mine in too. Yummy. Just like fresh corn from the garden

    LOVE silver queen. I grew it once and it was beautiful. Every year afterward it blows over after some huge thunderstorms and I have never been able to get it to grow since then :/ But if anybody ever got it to grow without blowing over, it really is sweet and creamy

    Every summer daddy grew silver queen and we would shuck it and momma blanched some and froze it and made creamed which was my fav with streak a lean in cast iron pan 😋

    I've been canning our corn a dozen at a time but I found a little easier way to cut the corn off, instead of the bunt pan I take a over size big salad bowl, in the center of my big bowl I use a smaller glass bowl flipped upside down, I prop my ears on the center bowl that's upside down and cut straight down an all around the corn ears, all the corn just falls directly in my bowl, I use a spoon to run down each ear to milk and get all the kernels out, fill hot jars, add bowling water and salt then pressure can for 55mins. Ain't nothing like fresh canned food in the winter!

    Paula, you said a word I've NEVER heard before. The way your mother used to prepare cream corn using 'strikaleen'?? Im not even sure I spelled that correctly. Can someone help me out here?Thanks y'all.😃 💖 🌽

      My mother used what she called "streak o' lean." It was pork fat with streaks of lean meat. This was in NC.

      Apparently, it is a thick cut salt pork that looks very similar to bacon.
      Mmmmmm.

      LOL. I have been tbat way all my life. I will always ask. I'm a VERY southern Hoosier. Down in this part of the state, we feel southern, believe it or not.

    You can used a mandolin slicer to get corn off the husk

    We use a tool from Pampered Chef and it zips the corn off the cob. We like the mix of silver queen and golden queen. Best if both worlds.

    Hey my friend, if you parboil your corn for 3 mins makes cutting it off the cob and tadyed so much better. Try it and let me know what you think.

    Now that my Mom has gone to be with Jesus I’m even more appreciative of how she used to spend hours putting up fresh corn and then giving a lot of it to us kids. ❤️

    Grew up in NJ nothing beats Silver Queen white corn and you only can get it in july in Nj .the regular white corn is just as good too

    im from Kentucky and we call it fried corn, we use bacon grease (drippins) instead of butter and MUST use an iron skillet! we hand cut corn with a knife 1/2 the corn kernels and then turn the cob upside down and scrape the rest off with the knife, this gets all the milk or cream off. Then cook in hot skillet of bacon grease . The best in the world!!!!! Love that you said hoecakes and tomato and onion with it!!! OMG Im so hungry now :)

    1st I have to say I LOVE YOU SO SO MUCH Nrs. Paula I never miss a show EVEN! I have to tell ya 1 thing tho So yes I also own a microwave and it can be useful BUT lol always a butt, it pull all nutrients and goodness outa anything veggie....... Just a tip really and post people dont realize it does but it 100% does. Thank you brightning our days. My dad recently passed away and its been hard but watching your show helps so so much. It bring back memories of me and dad watching you and me and my mammow Virgie watching you too.

      It's OK to microwave vegetables. It doesn't harm the nutrients in them.

      Actually, just the opposite is true. Cooking vegetables in the microwave with a very small amount of water is the very best way to preserve the nutrients in food! But don't overcook it in the microwave, that will destroy the nutrients just as badly as overcooking using any other method!

      Charles Delph absolutely! I have 45 years experience as a home cook and just learned last week that if I add about a teaspoon of mustard to salad dressings before I emulsify them with my hand blender, they will remain emulsified for a long time instead of separating back into oil and vinegar!

    I do enjoy seeing Henry. He is such a natural in from of the camera. He is so comfortable and let's his natural personality show. I know you and Michael enjoy having him over and love him.     Do you know how to make tomato dressing? It’s crumbled cornbread mixed with fresh tomatoes, onions, green pepper, and Mayo. Also some salt and pepper to taste. It’s delicious!!

    The grocery store sells a frozen cream corn that you just throw in a microwave and it’s as good as homemade. A lot less work.

    I make fresh creamed corn every year when it's in season, and I find the easiest way to cut the kernels off the cobs is with a bread knife. Zip, zip, zip, done. I'm a little fussier with mine (bacon bits, drippings but not a lot of grease, little bit of butter and cream, salt and pepper), but I agree it doesn't take long to cook, only about 3-5 minutes of simmering. And sometimes I make it in the microwave, too.
