I have made this these last three years since you posted this pozole recipe. I had never had pozole at Christmas before. We are addicted now! My brother loved white pozole. He passed away 6 months before I found your recipe as I looked for vegan Christmas traditions. I dont miss the tamales at all! Lol. I guess this new tradition is a new vegan version so it feels a little like he is still here. I know he'd love it, too! I also made a stuffed white pumpkin with wild rice, spanish style with comino (without the tomatoe sauce.) ' Looked really beautiful together on the table and was a nice compliment/ contrast. You are my go to mexivegan. 🤗

In Spanish they are called Setas húngaras, in Engliush Oyster mushrooms, delicious recipe you can also make the pozole with "setian" is soo good I make it like that for my daughter she is vegetarian, se ve que te ha quedado delicioso, también lo hago para que tenga mas proteína, añado garbanzos cocidos. Son sugerencias sólo eso!!

For the many vegetarians- add red cabbage instead of lettuce. You need the glutamine for gut health. The ominivores and carnivores get it from TONS of healthy sources.

Made pozole with jackfruit-It was EXACTLY like traditional pozole....flavorful with cabbage shreds, radishes and a salsita!

Tried it today the way I used to make regular pozole just omitted the meat for the oyster mushroom it was wow amazing you won't miss the meat at all!
