      What a contrast in cultures: Japan has self-flushing digital bidet toilets and China has holes in the floor.

      @@Moksha-Raver Actually, I wouldn’t say it’s a culture difference, Japan used to have a lot of squatting toilets, and you can still fine them in rural areas in Japan. Japan began replacing them to sitting ones only this century, and I believe it’s a result of western influence.

      I know local people living in Beijing for decedes and never tried douzhi, many people in Beijing talking about douzhi seems like a bravery test, funny. I had never tried myself, maybe one day.

      I was born and raised in Beijing, lived there til I was 15. I gave douzhi multiple tries in my life and hated it every time. It's utterly disgusting and one of the most extreme "acquired taste" foods. I think about 99% of Beijingers absolutely hate it, so don't feel so bad lol.

    the reason of not to mix the tofu brain is that mixing will cause stach sauces to become watery. Imagine a Carbonara with too much pasta water, the dish will lose its signature texture.

      Personal preference but breaking tofu into small bits doesn’t seem appetising. At Yum Cha they try very hard not to break it.

    Just for reference, the first food 'Jian Bing' is traditional local food of Tianjin city. Although it can be found nationwide, most cooking is not authentic. To save cost, most people cook it with only wheat flour, while it should be a mix of mung bean flour, corn flour and wheat flour.

    in fact, Chinese are very sensitive about the leftover food, since giving others leftover food isn't a very respective behavior(very rude, unless you give it to your parent when you are young.). If you want to share some food in real life, we usually pack the food before we eat and then eat the unpacked food, and don't forget to tell the person you give your food to what you did.

      Yeah, I noticed this too. I know Amy definitely doesn't mean harm and she just doesn't want to waste food, but I hope she's careful about giving her neighbors too much leftover food from her food attempts. I don't want them to take it the wrong way if it happens too often. 😭 Amy be careful of this subtle thing!

    As a typical northern Chinese person, I mix the tofu brain every single time. So, Amy, just do what you want to do. Maybe, You will find a new flavor.

    Thanks for putting ur taste buds on the line trying ”Dough chi “, I can literally smell it through the screen. I used to give that a go yrs ago, that smell’s still impressive to me. And that Chinese donut must go well with brown sugar on top.

    The northern bean curd is salty, the southern one is sweet, the Sichuan bean curd is salty, with shallots, chili oil, sprouts, fried soybeans, it is absolutely delicious in the world, amy should try the bean curd in Sichuan

    As a born and raised Beijingese, I never liked it as a kid, but when I grow older, I find it's actually not as bad as I remembered. So it would taste much worse if you drink 豆汁 Douzhi cold, or only take a small sip of it. Because in that way you will taste its full flavour in details, which is not pleasant at all. The right way to drink it is to do it while it's still hot, and take a big sip of it then swallow. That way the only thing you will get is its aftertaste, which is not that bad, especially with the help of Jiaoquan or Xiancai.

    我吃豆腐脑就是不喜欢搅拌开,一勺一勺的吃比较好,但我媳妇就喜欢搅拌完再吃😆虽然我们都是东北人,但是在这件事上还是有不同的选择,我们也都对方的选择予以鄙视,哈哈~~~~

    So, when I lived in Morocco, we had the squatty potties as well. I'm not going to go into any detail here, but, tell Derk if he is nervous about them: You can use them standing up. You just need to have confidence and a certain degree of concentration

      I actually think the concept of squatty potty is nice since I don’t have to touch a million people’s butt indirectly, but whenever I see it my weird brain will picture a scene where I fell in it and not able to come out.

    Derk is such a great sport! So are you !!! ... Even I am not able to imagine myself trying fermented mung bean soup. Mung beans had been the staple for cattle and equines. I doubt they would consume this either... 🤣🤣🤣🤣🤣

    中国从南到北从东到西,有各种不同的豆腐脑。除了咸甜之分,咸豆腐脑的卤汁区别也很大。卤汁一般都是水煮各类东西之后调味再勾芡的,但其中三种比较特别。一种是河南部分地方,直接用胡辣汤当卤汁。一种是安徽部分地方,直接用沙汤当卤汁。最后一种是河北一些地方,卤汁是不勾芡的,清汤。这种清汤豆腐脑,就有两种吃法,一种是整块吃,还有一种是完全搅散了再吃。
    所以豆腐脑要整块吃,也不是普适的。

    I have such a great time watching you two trying different food items! It's really a pity that Derk didn't get to try the tofu brain and the sweet bun!!!
    What I love more is your interaction with the locals -- sometimes I am afraid of the Aunties (as a Chinese myself) but all the ones you met are incredibly nice !!! I think it's because Amy gives out this super positive, kind and warm vibe so people automatically treat you super friendly. I, on the other hand, suffer resting bitch face syndrome so not much luck for me LOL

    I am living in Tokyo now, I love “糖油饼” very much, it’s one of my favorite breakfast when I was young, of cause, I can’t find it in Tokyo, so , one day, I decided to make it by myself , result: success! My kids loved it too, but second time was not as good as last time,because the most difficult part is sugar dough, anyway, I am happy to know that you like it too! 😎

    You did a very good learning the language, I think in the west its more common for people from anywhere that you must speak English and it's more common. Whereas in the East, doesnt matter which country, when you can communicate in their language, it shows you want to embrace their culture. Thats why the strangers you meet are so friendly with you, because they appreciate you took your time to understand their culture. Thank you very much for being one of the few that really did embraced it. You are an inspiration to the future generation on being more open minded!

    The "tofu brain" is a good literal translation. There might be some history why it's called "brain", the closest translation I can think of is "soft tofu". I think in part that we believe brain is supposed to be ultra soft.

      honestly the brand liziqi is over priced. It usually charges several times than the normal brand.

    Is the restaurant you went to for "douzi" is 护国寺小吃? If so, there are a lot of "must try" food options in the restaurant you went to for "douzi". It is one of the most or the most famous traditional food restaurant in Beijing. You can get suggestions from your neighbors.

    我从小家庭教育也是,如果自己碗里的饭菜不吃完,不管多晚,只要没人帮你,就必须自己吃掉,不能倒垃圾桶。但是,豆汁是我唯一一口以后直接整袋倒马桶里去的😂即便过去快二十年了,我还记得那个可怕的味道🤣
    豆腐脑我也喜欢咸的,虽然苏州上海都嗜糖,但豆腐脑是吃咸的~

    Hi Amy, there is a Jilin restaurant in Chatswood 吉林人家. You could ask your parents to give it a try ☺️. Very authentic flavour, large portion size, avoid lunch rush.

    Chinese people are people who had experienced many episodes of famines and hunger. Foods are a necessity more than a luxury. Many foods taste are acquired even to most normal Chinese due to age group who underwent different living conditions. One thing is Chinese never waste any food that's edible cos there will be someone who will eat it.

    The problem with the squat toilets is if you are working in coveralls at a plant it gets really tricky 🤪🤪🤪 I’ve seen a few guys come out of the can freaking out 😁😁😁

    I still haven't wrapped my mind around the idea that some people find it difficult to squat. Squatting all the way down is just as comfortable as sitting...well, apart from the fact that your feet fall asleep after a bit. I wish squatting toilets were the default everywhere because that way you don't have to sit on pee or on cleaning products, or uncomfortably hover-squat. Plus the squatting position makes it easier to poop, and the fact that your feet fall asleep disincentivizes people from staying in the bathroom forever scrolling their phones or reading a book.
