I totally agree. I grew up eating chang fen in Guangzhou, so I prefer the haphazard street version, which seems to be more tasty, than the restaurant more orderly but thicker skin version. Somehow Cantonese rice porridge is cooked for a longer time, so it’s easier to digestion, whereas the northern version of xi fan 稀饭, is more like a watery rice version. Congee is for people who are sick and need easier digestion as it’s very thoroughly cooked. Thanks for so positively introducing the Chinese culture to the world.

So glad to learn about your upcoming trip to China. Wish I could be in China one day! Other than the foods in China, I enjoy the friendship over there more!
You have been training your parents well, when they come to visit you in China, they would feel comfortable with their surroundings.

Congee is also a comfort food when we're down or rainy day, other then for breakfast, main meals & as sick food. As for the youtiao, you need to soak it in the congee/porridge much longer before consuming. Plus, you have not tried dipping youtiao in authentic black coffee (not from Starbuck or Coffee Bean), like we do in Singapore/Malaysia; which you may give up on dipping it in soya bean milk.

Tea eggs are eggs basically cooked in tea with soy sauce. You can add other ingredients to the solution like star anise, peppercorns…etc. First you boil the eggs then lightly crack them all the way around so that the solution can get inside then just cook the cracked eggs in the solution. Some people even put cola in the solution.

At 3.55 your Dad mentioned that his chopsticks skills would not be good enough to use for congee. It reminded me of the time many many years ago a Caucasian colleague asked me sarcastically how did Chinese people have soup with chopsticks. Fortunately, I was a lot more adroit mentally in those days to let him know that we use chopsticks for soup the same way he and his family have soup with knives and forks.
Thank you Amy for your videos on Chinese culture and cuisine.

A hot bowl of congee with fried Chinese churros or youtiao is comforting food in cold winter( sprinkle with pepper). Your parents should try the rice noodle wrapped in Chinese churros with sweet and salty soy sauce. It is really yummy breakfast. But if Chinese churros can be cooking for lunch and dinner besides breakfast. And that dish is steamed egg with pieces of Chinese churros. 😋 Also try fried mantao with sweet condense milk is good too.
