Jorah in the books is not only a veteran of two wars (Robbert's rebellion and the Greyjoy's rebellion,), but also described as an admirable swordsman by the Dothraki, who obviously don't compliment anyone easily, given their nature as fierce warriors themselves. He also drew against Jaime Lannister (not great, but definitely very good jouster) after breaking 18 lances against him (One could argue, that jousting is not a true testament to a man's combat prowess tho, but it still showcases his horse riding ability and his determination to be the best). So this scene shows us one rusty, out of shape Jorah. These slaves would have had their asses handed to them, if he was in his prime. Sure, he was no Arthur Dayne or Barristan Selmy, but a level beneath, which is still extremely good, given the fact, that the above mentioned are good contenders for the best ever in this universe.
Maybe, in the books we never see Jorah tested against other swordsmen of whom we know a great deal when it comes to their skill, from other people praising and fearing them. But remember that Jorah kills Qotho in a duel. For context (i know you know this but just hammering the point home), Qotho is one three of Khal Drogo's (regarded as the most dangerous fighter among the dothraki that we meet) personal bloodriders. In a culture that values strength and skill above everything like the dothraki do, you have to conclude that Drogos bloodriders are the best there is. Before this, Qotho snaps Viserys's arm like a twig when he pulls his sword out. Granted Viserys is weak, but still breaking a man's arm that easy is a pretty telling show of strength. Qotho also kills Quaro, who the Khal personally assigned to keep his new khaleesi safe, so likely no weakling either. And Jorah kills Qotho pretty decisively. So while we don't know if he's as good as Selmy, Dayne, or a prime Jaime in swordskills, we do have some metric of how dangerous he is and could possibly argue that he's in their league, if not better than one or more of them. He's definitely a better jouster than Jaime, beating him at Harrenhal, and we know Selmy respects him so that's gotta count for something.
