Sure, Will explain in upcoming videos. One thing to clear here that still MS office in iOS and android having mobile version of their app. These apps are not having full feature as like their desktop version. But most of daily work we can do in iPad like document editing, email, printing.

Yes you can install Microsoft office app, but it will require office 365 subscription.
All full feature of office laptop apps not available in ipad app. But you can do most of works in laptop.

if my mouse came with dongle can i still connect to ipad without dongle?
Only bluetooth mouse connected without dongle, logitech m590 mouse have both options dongle and bluetooth. But normal wireless mouse come with usb dongle that can only be connected using usb otg adapter by connecting in the usb port of ipad.

All these apps not having desktop app feature but you can do editing like text typing, font size etc.
