I hope you did not have to give up your PoorMansGourmet channel: it's the best. Having 2 inch-thick pork chops on hand, I gave them two extra flips & cooked for a total of about 8-10 minutes, basting throughout. Am sure the neighbors are jealous of the succulent aroma. This recipe is unbeatable, and the au jus is incredible..

Glad you dont waste the drippings. My Mom used to make killer sauces out of it. They look damn good. Wish meat wasnt so expensive around here.
That's why I filmed these Classic Pork Chops. Beef prices are through the roof here, too.
Full marks keeping the bones pan centred.
I poke a small sharp bladed knife between the meat and both sides of the bone before cooking. This helps the bone to cook evenly with the meat.
Good ol pork chops are pretty hard to beat.
I've never forgotten that Bradey Bunch episode where Bobby was seeking an image and he adopts the voice of Humphrey Bogart. He asks Alice what's for dinner? She replied, Pork Chops and Apple Sauce. Bobby repeats the reply "Pork Chops and Apple Sauce" with the Bogart voice imitation.
So I still do the same 50 years on... 😂😂

If you plan ahead a little, a dry brine overnight in the fridge makes a huge difference in the juiciness. Just put them on a rack, salt both sides lightly and stick them in the fridge uncovered :) I do the same with steak sometimes
I did this with the other 2 pork chops from the video, actually, thinking the same thing and there was no noticeable difference.
great recipe, I think it's more noticeable with brining and poking holes (using meat tenderizer tool) on the surface of the pork chops. I did it and even though I overcooked a bit it's still juicy.

First time preparing pan fried pork chops. I used thin bone - In chops. Didn’t have bacon grease, so I just used butter. Used garlic, in the jar and Rosemary spice. They didn’t get as brown as I would have liked. I didn’t have much juice to baste the chops with. They were ok. Would have preferred more flavor.
That's too bad. If you cooked them the way I showed you how to do it, we'd be having a completely different conversation because my Pork Chops have a lot of flavor! 🤪🍻

It's amazing! 😋 🍻
1. Double thick bone in Chop.
2. Season it with a good amount of olive oil, salt, black pepper ( coarsely grounded ) & red chilli flakes. Let it rest for 2-3hrs.
3. Slice the sides of the fat to stop it from curling.
4. Heat the pan & add olive oil.
5. Start by searing the sides & then lay them down.
6. Add some good amount of butter, Rosemary, Thyme & garlic ( crushed, peeled & not sliced ).
7. Keep it moist with the butter being splashed on it while cooking.
8. Remove the chops and let them rest for 5 mins.
9.Serve with a loaf of Dinner Roll, Salad & two separate sauce / chutney.

What is the proper internal temperature for the pork chops? I ask because i have dried them out in the past.
Much like chicken, Pork is generally safest to eat at an internal temperature of 165° F but more recent studies have shown that 145° F yields the best results.
