Oh interesting. I‘ve used creamed coconut before (I actually like to freeze it in icecube trays and eat it like candy), but I never tried to make coconut milk from it. Sounds like a delicious recipe 👍
Sweetened with dates sounds great 👍 Costco has awesome dates. They’re soft and I think they are organic but not positive. Very tasty dates. They come in a bag about the same size as the one you have.
If you look on her website, the recipe for her chocolate ice cream is almost the same. Instead of 1/2C cocoa use 3tsp pumpkin spice, and instead of 1tsp vanilla use 1/2tsp vanilla.

i just throw the whole thing in! because of how long you blend it, nothing should be left
