I have already confessed my sincere love for my bubbly 6+ year old sourdough starter that I talked about in this video: • All About Homemade Sou...
I use it in my kitchen often. Pancakes, english muffins, waffles...I have even attempted Sourdough Doughnuts: farmhouseonboone.com/farmhous...
I love the way sourdough adds a depth of flavor to baked goods that just isn't there in store bought bread products.
Plus, I have a satisfaction cooking with a starter that I made and maintained with my own two hands. I hope to pass it down as a family heirloom.
To me, it is valuable to learn how to make something in your own home that you just can't buy in the store. Artisan style.
I get really excited by things like this.
Grains have gotten an undeserved bad rep in the health food community.
Have you ever heard of phytic acid? Basically, its an antinutrient found in grains, beans and nuts that interferes with the absorption of certain nutrients. They are present on grains to keep them from spoiling.
There is a reason they are there, but there is also good evidence that our bodies weren’t meant to handle them. Proper preparation of grains eliminates most, if not all, of the phytic acid in offending foods.
But, did you know traditional cultures thrived on grains? The key difference between the way they consumed grains, and the way we do in our modern society can be summed up in two words: proper preparation.
It was necessary for folks to ferment grains for them to rise into delicious bread. Before yeast was isolated and sold in little packets, sourdough starter was a valuable commodity in homes and families, passed down for generations.
These days we’ve lost that art. And, what have we found? People can’t handle grains anymore.
Read more about sourdough starter, how to make it and why I love it here: farmhouseonboone.com/farmhous...
But for now let's talk about the topic at hand: How to Make Sourdough English Muffins
I love Sourdough English Muffins because they taste like bread and work like bread, but take about 1/10th of the work making sourdough bread takes.
And for this busy momma, that's a recipe for a great...well..recipe.
I can whip them in no time. And my family can enjoy a healthy bread that is so much cheaper than sprouted whole grain bread from the store.
Sourdough English muffins work great for sandwiches with meat and cheese, or smothered in butter and honey for breakfast.
How to Make Sourdough English Muffins
The night before you want sourdough English muffins stir in a glass bowl:
    2 cups flour
    1 cup water
    1/2 cup fed sourdough starter
Cover it with a towel and let it sit at room temperature for 12- 24 hours. You can get away with a longer in the cooler months and the fermentation process can take less time in the summer if your house is hot.
After it has fermented, add to the mixture:
    1 tablespoon honey
    1 teaspoon salt
    1 teaspoon baking soda
Preheat your cast iron skillet on low and add a little coconut oil.
Mix the ingredients together until they are fully incorporated. You will probably have to use your hands for this. The dough will be pretty thick.
Divide the dough in 12 equal parts and drop it in your cast iron skillet.
Keep it on low for about 10 minutes so the dough has a chance to rise.
After you are happy with the amount of rising, turn the skillet up to about 3 or 4 (not quite medium) and continue to cook until they are browned slightly on the bottom.
on’t try to flip them until they come up easily from the pan. The goal is to only flip them one time.
Cook them on the other side until browned.
These English muffins have a tendency to cook on the outside before the inside is full done. So, be sure to not turn the skillet up to high. If they are browned on the outside, but still not done on the inside, throw them in a 250 to 300 degree oven for 10 minutes or so.
After they are cooked all the way through, slice them open and Enjoy!

I made these without the baking powder as you show, wow, my dough trippled and the nooks and crannys are excellent. They taste amazing. I live alone and have a feezer of great foods to pull out.

I ADORE this recipe, but the only thing that was bothering me about it was how imperfect and blobby these turned out. But problem fixed- I bought some of those silicone round egg molds and now I just scoop my batter into those on the frying pan and they turn out the perfect English muffin shape!

Just made these for my family. Delicious! We are in Australia and the English muffins in the shops have decreased in flavour and our flour is so far from the original grain (hence the health problems especially inflammation and auto immune diagnosis increase). So finding you and your recipes are so important for us as we transition to fermented foods and home made. We are fortunate to live off grid in the Australian bush so am motivated by watching your videos and reading your blog. Thank you so much for sharing.

You are great. Clear, concise and your recipes fantastic. I can see that making English muffins is going to take some practice. ...everyone’s stovetop is different. I don’t use cast iron (it’s too heavy for me). My English muffins turned out eatable but not the wow factor I was looking for. I’ll try again once I eat what I made. I used whole wheat flour and they could use more honey. I’ll also roll the dough in some cornmeal. I had some trouble with sticking with stainless pans.
Thank you. Love your posts and energy.

We make these and now they’re on regular rotation. The oven or the low temp on the stove both work but I sometimes put a lid on the pans and add a few drops of water to let them steam. My husband LOVES these and so do I. I make them bigger because he likes a substantial sandwich size. 😁😁😁
Thank you for this delicious recipe.

Yeah my first time making them and my dough was runny… not sure why. What you think worked this time for you ?

I used 1/2c less flour and that seemed to help. Not sure if my starter was just more hydrated than hers or if the other times i just had bad luck lol. Either way the half cup less flour worked for me.

I love how forgiving this stuff is. I've made this twice. First time I let it sit for a little over 12 hours and the dough was still super sticky, it was bubbly but I wasn't able to make balls of it, but poured it into the pan in circles anyways. Despite that it came out tasting great even in its flatter form lol used it for breakfast sandwiches, husband loved it. The second time I let it rise longer (kinda forgot about it and had to peel the top off) it was bubbly but still sticky. I put it in a different pan, about 2 tbsp in each cup of a cast iron muffin/cornbread pan and I put it in the oven at 200 for a while (didn't time it) till they were cooked enough to hold their form. They rose great that way and then I toasted them on the stovetop in a regular pan. They are perfect English muffin shape and texture and everything. Definitely give it a shot and don't stress about perfection. 🎉

Thank you for this recipe. I am much more likely to use it if it is simple. Doesn’t need to be fast just simple. 😃

I absolutely agree with using your hands...this is how you can tell if texture is correct 😀
Also use my fingers to pick out kefir culture grains from my kefir when it's ready.

Baby is so comfy and right with Mom, where babies belong. I add about an additional 1/4 - 1/3 C of warmish water & 1/4 C of fresh cornmeal to the bowl with the flour and water. That extra water lets the cornmeal plump up better over night without drying up all the water from the wheat flour and starter. You may have to play with it a bit. Muffins are super crispy good when toasted with lots of butter, of course. Do so enjoy your videos!

I'm surprised you don't have a bread machine that mixes your bread and bakes it in one pan. But I tried cooking biscuits in the oven the other day in my cast iron skillet and I really liked the crunchiness that I got. Yum!

Finally, today was the day. I made my first English muffins with sourdough. They are so delicious, wow I'm so impressed. Even only with butter they taste so heavenly and a little bit sweet. I will definitely make them again and try to get a sourdough with a consistency like yours. Mine is more liquid.
When do you feed the sourdough before using it, right before or 12 hours before?
Thank you so much for your wonderful recipes, you are an awesome role model.

Bekki L today mine was liquid too! But last week, I had more of a doughy, not as much as Lisa’s. I am still attempting to cook them. I’m letting them rise right now😚. In the video, she was going to cook 12 hours later, but ended up cooking 24hrs later so I am wondering if she fed the starter at the 12 hour mark. I I think I was at hour 14 and the rise was gone.
