Thanks! Technically it is the opposite of reverse sear. I let Chris take the lead on that cook. If I did it again I’d put the lid on while it’s searing so it would Sear and get an all over cook at the same time. Either way it was a fun and tasty cook!

Lmao! We held Joe’s keys until the video was done so he wouldn’t run off with the Tri tips! We’re you able to find Tri tip easily or did you have to have a butcher track it down for you?

I finally got 1 to get me a decent supply of Prime beef but not exotic cuts... Looking forward to your next vid. I became disable to work because of extreme spine disorders and I am getting into more than just grilling and smoking the normal things and way. Keep the cooks coming.

Thank you! And thank goodness Tri tip is easy for me to find in Denver!!!! I’d never cook Wagyu beef without my grill grates with how much fat drips from it. It would be a fire hazard! Lol.

Good vid. I cooked my first Tri Tip three weeks ago after finding our local butcher here in northeastern Vermont had some in house. It was $7.95 a pound for Choice Grade and well worth every penny. I smoked it on my Weber 22 1/2" Kettle with the SNS with pecan and apple chunks until it hit 115 F, let it rest for 10 minutes then reverse seared it but didn't use the cold grate technique and it came out exactly like yours, a perfect med rare. Thank you! We were a little surprised that they came out so identical with cooking them totally different ways. Just shows that one method isn’t necessarily better than another if you know what you’re doing.
What is your method for reheating tri-tip? I have a foodsaver and sous vide, so I tend to reheat all of my meat left overs with my sous vide. I do agree with you though. If I have some leftover steak in the fridge, it has a 30% chance of being eaten. If I have leftover tri-tip, it's gonna get eating 99% of the time. The 1% of the time it doesn't get eaten it's because I forgot about it or it got lost in the fridge somewhere.
I've never cooked a wagyu tri tip before. What about trying the grill grates turned over to sear the entire tri tip. I think both sides would produce a great product. I contact Midland Meats to see if they will ship to CA. Thanks!
I think for reverse searing the flat side of the grill grates would work well. For direct cooking I think it would burn the meat a little too much. Midland will ship, just be sitting down when they tell you price! Luckily I can get it locally so I can get just a Tri tip or a ribeye instead of having to order enough to make it cost effective with shipping.
I’m not sure I’ve ever done a choice Tri tip since the price at Costco is reasonable for prime. There’s just something about coffee rub that makes it work so good in Tri tip. I’d never use coffee rub in a steak and it is basically steak.

Tri-tip is hands down the best beef for leftovers.. no other cut holds up to the next day like tri tip

TheKettleCookers I eat it cold 99% of the time unless I throw it in a scramble or a hash.. throw a little SPG on it and eat it like a meat chip

Love me some tri tip here in Detroit. Using the Trader Joe's coffee and roasted garlic rub. Good stuff. Even choice at $3.99 lb is good.
