Belle de Boskoop is the "go to" apple in Germany when it comes to cooking and baking. If you can find it where you live, that would be the one. Or you try to find out which US apple resembles it. I haven't really found any but it seems that apple varieties are limited where I live (Texas).

That is odd. I have no idea why you didn't get the notification. It seems that RUclips is not very reliable with that, so, maybe subscribe to the newsletter on my blog since I always send a newsletter when I have a new recipe/video.
I mention it at the end of the video: I used Paulaner but you can use any beer that you like. It also depends a bit on what taste you are going for. I write a bit about that on my blog post if you need more information.
