Been growing and using elderberries since the late 80s! Wonderful jelly, wine, tincture and syrup! Got a 15 foot tree in my yard that I planted myself back in the day! Elderflower fritters are wonderful too!
If you're already sick, be careful with the astragalus as it can hold the virus in your cells, making your recovery time longer. As a preventative though, it's great. I make two syrups; one with astragalus for use as a preventative and one without it, for those who have a cold or flu in progress.
Astralagus can lower cortisol so anyone that doesn't produce cortisol can go into adrenocortical crisis. And this is from experience. There are multiple herbs that lower cortisol so please research all herbal supplements before you take them.
If taken when already sick it can set off an immune system firestorm. Elderberry needs to be taken periodically as a preventative, not when already sick.
I’ve been told one tablespoon a day and as soon as you feel something come on take it 3 times a day rather than once. It worked well for me but that is anecdotal. Oh, wait, I just heard that. Last year I’d have a tablespoon a few times a week.

If you buy American elderberries (Sambucus Canadensis) you do not need to boil them because they do not have cyanide in them. You can order them freeze dried from River Hills Harvest. By not boiling them the beneficial antioxidants are preserved. Hope this helps.

Amy was not recommending a tincture because of some sources claiming that the elderberries contain cyanide which requires them to be simmered 20 minutes. I researched this to see if this was true and one source said that the cyanide was only contained in the immature (not ripe) berries which could be removed during washing when they floated to the top. I switched to Aronia berries (Black Chokeberries) for my tinctures because they are supposed to contain more vitamin C than elderberry without the cyanide risk. I have made both and both have had no ill effects that I know of and have cleared up my cold symptoms very effectively. As for adding honey to a tincture-? If both are shelf stable (no water), I wouldn’t think that would be a problem but I have never tried it.
There are actually two different kinds of medicinal Elderberries. One is European and there is an American Elderberry. Sambucus canadensis (North American Elderberry) and Sambucus nigra (European Elderberry). Tests conducted by researchers at the University of Missouri’s Elderberry Improvement Project also show that canadensis plants have far lower concentrations of cyanogenic glycosides, the compounds in elderberries that give some people stomach trouble. Therefore, they do not have to be cooked At higher temperatures.
I made elderberry syrup a few weeks ago and I don't know what I did but it was bitter and just awful!!! Wandering if it was the cloves?!? Then added the raw honey. :( I will try your recipe and see if it turns out better. ;) Thanks and happy homesteading! ~Shaina~
It would depend on the amount you're making, but you can add UP TO 1/4 cup of brandy per cup of syrup. It can last another two months with it, you'll just need to check it each week.
Hi Amy. Loving your channel and recipes ! When you make per say x3 the recipe do you also x3 the time of boiling since the amount of water is greater? Or 20-30 minutes even when making bigger amounts?
Hey love! Keep the time you boil the same. It’ll take longer to get to a boil since it’s more ingredients but once it’s boiling, it’ll still only need to be extracted for 20-30
I have a question about the cyanide risk. I made a tincture from a tea blend called Immune Tea. It has Nettle, Alfalfa, Peppermint, Echinacea, and Elderberries. Would it be safe to use since it wasn't heated? I am new to herbalism and still learning. Your book has been a great help! Thanks so much!

I just finished making your Elderberry syrup with Astragalus, following your instructions exactly. My question is regarding the boiling time. I tripled the recipe and as a result I had to boil much longer than thirty minutes to cook it to half the amount. Did I loose much of the medicinal value as a result? I just assumed the larger amount took longer to cook down? What say you? Love your podcast.
Is there any problem if you accidentally add honey in the initial boiling process? I wasn’t following my recipe closely and added a little honey before I realized that is for later…?
I used to make elderberry syrup all the time but stopped for a while and have elderberries and elder flower from years ago. The expiration date was on 2018. Do you think it would be safe to use them? They don't look spoiled and still have a potent smell.
I know this post is old however if you happen to catch this message I was wondering. Do elderberries have a slight sour smell and do they taste very bitter without the honey?
