I use butter instead of oil to make my omelets. Most times, they do not stick. When I add too much water to the mixture, they stick. I also let the eggs come to room temperature before using them. In addition, I'd recommend cleaning your stainless with a white Scotchbrite and Barkeepers. Then rinse your pan with a sponge and water. The SS should be shiny, so nothing sticks. Bro, you literally failed, then cheated with the hot sauce, LOL! Just teasing. I like cooking on my old, well seasoned cast iron. Totally not stick and no broken yoke. With that being said, egg is almost the perfect food. If you don't succeed at it the way you actually intended, just toss some hot sauce or cheese, and you still cooked it perfectly. try waiting like 30 seconds after putting in the oil. also use eggs as close to room temperature as possible.
