I have two Quonset huts 30 x 60 p style. One on a slab and one on 10" block wall connected to a large two story building I built. I love these buildings. I put them up mostly by my self. They are awesome.
No one seems to be addressing a potentially fatal flaw with these.. How do you waterproof the screw holes and areas where the panels overlap? Especially when doing spray foam this could turn into a nightmare.
Near the top of the stairs there’s a door to an attic type space for HVAC and storage but the ceiling is kinda low in there. That’s probably what you saw.

Really like the way you recess the walls of the end walls to create interesting angles inside and outside of the space.

Do you have a floor plan? It looked like there was a door upstairs that wasn’t opened, is that an upstairs bathroom?
