I sharpened a Henkels for my Brother in law and He started honing/stropping before He used it every time.... it's been >1 year and it's still cutting ok. If you use a good board, avoid the dishwasher and put in some maintenance it's crazy what's possible. ❤👍
I enjoyed your discussion of honing. I too frequently recommend this to my customers, and I usually give a demonstration, using the same vertical stroke method you describe. I also point out to customers that honing doesn't accomplish a thing if you aren't hitting the apex, and then I show them the "Sharpie trick" so they can actually see whether they are hitting the flat of the blade, the shoulder, or the apex. I also show them a flat Nanohone diamond Nano Strop, which is costly but very simple to use when combined with the Sharpie method.

When you get to move in to the new shop, would you do a video of the move in a set process for a good sharpening workflow?
I am going to try I will say I have made changes to my current shop several times over the last 5 years but hopefully I can get something good right out of the gates and not have to make to many changes

Quick question - I've noticed you have a few good work benches with butcher block tops. Got any recs for one I can just buy as-is or one that would be a stupid-simple setup? I'm looking for something probably 2X4ft that I can mount a 4" bench vice on, and maybe a smaller bench grinder. Kinda hoping for something reasonably affordable ($200-300ish) that wont be too much of a project.

A few years ago I got a really inexpensive butcher block top to put on a laundry room cabinet, from IKEA. Might be worth looking into getting one of those and attaching it to whatever suits your needs.
