Welcome to my channel! I’m a retired police officer, having served until the age of 48, and now at 55, I’m fully immersed in my successful sharpening and laser engraving business. Here, I share my journey of transitioning from law enforcement to entrepreneurship, and more than just sharpening techniques and training. I aim to provide insights into all aspects of this new career and my life, allowing you to get to know me a little better.

German Metalworker here .. sry Dude, but insted of welding, may consider some JB-Weld Epoxy .. 80% of the Weld is close but not hitting it 😆 .. but i guess for what it is, it is enough
where can I purchase the grey merry-go-rounds you are using for your dental wheels?
The parts look zinc quoted. Are they safe to weld?
Not zinc it’s magnetic and pretty heavy pretty sure it’s steel

@ you can weld zinc and zinc coats just do it outside if concerned you and grind off the coating this did not have a coating
I saw a video where a knife maker purposely abused & burnt up a motor on one these. If you are concerned about burning any electric motor up, attach a temperature sensor & monitor the temperature. Be cautious & take a break if it starts getting hot. Unless you are doing heavy stock removal quickly I sincerely doubt these motors will give-up.
I would not use Windex on Acrylic/plexiglass. Or at the very least I would test it before using it. Windex is known to haze plexiglass and could ruin the piece.
You are an excellent teacher (as well as sharpener) ! I love that you show us your process of adjusting a tool to make it "right" and work for you! Lots to learn here from you! Thank you!
I'm curious to see if you end up doing the coarsest grit on the 2x42 & then refine on the 1x30's, that was my initial thought anyways. Looking forward to part 3!
@@512Ryan that’s what I did today it still needs some fine tuning so it was easier for me to do the A30 and A16 on the 1x30 when I get a chance I may make another angle guide.
The Grizzly sits much higher than the other two units on the downdraft table. The knife is right at eye level. Does that create any issues for you? I have an unrelated question. Could one use the slack portion of the 1x30 to re-convex salon shears? I’m trying to use my TSPROF 03 Pro Hunter to sharpen a pair. I bought the ultra convex attachment but am afraid to try it on the shears. I think it’s made for knives primarily. Your thoughts. Merry Christmas!

Nice work, Paul! That's looks pretty good for your first weld! I love 2" belts for sharpening. Once you get used to it, you may want to try doing your initial work on the 2x42 and your refining work on the 1x30. The 2x42 should give you a straighter profile and speed up the rough work. One question: What camera do you recommend for recording sharpening videos?

Unfortunately it doesn't. I think if the controller was replaced with one that allows rotation both ways it may but I'm not positive. Merry Christmas ✌️

Can't say I'm a welder but I think the hammer is for like a slag that forms over the weld that you chip off as generally they are referred to as a chipping hammer and then you brush it to clean it and can grind / sand it to make it smooth.

Good luck! I'm not a welder either, so I'd have to drill a couple 1/4 holes, counter sink the heads, bolt the back and then JB weld and ginr the edge next to the belt. btw, I am impressed by your welding skills!
What’s the best TSPROF if I want to sharpen mostly fillet knives..?? The most popular are 7” but some offshore guys use at least 12” fillet knives. Our family’s EDCs are Spyderco Salts, Benchmade & old Rat Ontarios V-10 steel.
@@steliosmalamatos8755 KO3 is the very best but for filet knives I would rather a belt sharpener than a KO3 they are one of the few knives that in my opinion are best done on a belt sharpener and edge trailing if you are sharpening them where you can have power that would be a very good option to consider like a Ken Onion Elite amzn.to/4gtEL4C If you don’t have power in the location then a KO3 the hard part is the curve in most filet knives is challenging and belts do a nice job on them.
Excellent video. I have a set of ~15 year old Wüsthof Classic knives, which I’m keen to repair if possible. Do you think having the knives close to a range, or other heat source degrades the plastic faster, with the rapid change of temperature? Also, is there a specific prep you do to the stainless to improve the bonding or would a good scrub with Barkeeper’s Friend be good?
I wish I would have been able to see this unit before I bought the other stationary one you also gave high marks. I have already found I don’t use it as often as I thought I would. The downside I see with this one is you have to have a monitor to use it.
That grinder is really well balanced, I have a friend with a laser cutter would that work for engraving or do you need something specialized for graving?

If you cut a 10º bevel in behind that 17º bevel it should lower the cutting force in by 30% on high density bevels.
so would that be grinding a 10 degree primary first and finishing with 17 or is this something different Dan how do cut a 10 degree behind it a 10 degree primary would be hard so I feel like you are talking about something else but I would like to try it.
@@ALXSHARPEN Most often I grind a 7º to 10º angle per side bevel to just about 0.005" shy of the apex. At that point I switch to a 15º to 17º per side, with a target of 0.010" bevel length which yields 0.005" blade thickness behind the cutting edge. - If you want to increase edge stability further cut a tiny 0.002" - 30º bevel on the outside of the blade. - You need to know if you are sharpening for a left handed of right handed user to know which side of the blade is the outside to the end user. More info . . . - Knowing the angle & length of the bevel you can always calculate the thickness of metal remaining in the blade. - Blade chipping & damage is most often limited to apex zones less than 0.0025" thick. - Carbon clumping in the blade steel is normally limited to only a few areas of the apex leading to damage of greater depths. My preference is to ignore these deeper chips to preserve the thinnest portion of the blade. - I am testing various blade designs & sharpening angles on high density vegetables to define what we can expect to gain &/or loose relative to blade design & sharpening variables.
Those are beautiful custom made knives which require a lot more time & effort than most people could imagine. Working with metal for over 50 years I have turned my focus to culinary knives. For the best cutting culinary knives thin precision ground blades are optimal. These thin blades are very flexible which It is super easy to end up with humps & hollows. The best way to alleviate these issues is to support the length of the blade when grinding the bevels. You are absolutely correct, it can take hours to fix these blade grinds.
@@danielbottner7700 especially new knife makers it’s hard to get some to understand the best thing is to have them sharpen one of their own knives or have them come watch that’s what I did with Jeff he came in a few years ago and he got to see first hand now he brings me far better thinned out knives for sharpening. We all have skills we can learn from each other if i can ever get some time I want him to teach me how to make handles because he’s really good at it.

Could be a stupid question but do you ever run the CBN wheel through the water trough? Or is that completely null with this method?
no stupid question- Yes you can run CBN in water it's best to use something like Hone Rite Gold if you run them in water amzn.to/3ZN2OEA or Tormek Solution amzn.to/4gPj27d if you run regular water when done you should make sure you dry them really well I don't like to run them in water without one of these two solutions. I like Hone Rite Gold I use it on my TSPROF Diamond stone they work much better with a little on them. Most people who run CBN in water are going to capture the metal dust but it's not needed for heat because CBN on Tormek generated almost no heat when grinding dry. I like dry because I can also see the edged better and I like the feel of it and I also like not having to deal with water. When I am done I just hit it with the shop vac- Hope that helps

I sharpen for my friends and neighbors as a hobby. I do it for free. Early on I purchased the multi pack of the generic sleeves. I always return knives in a sleeve. I just cut them to size and put the remainder in my bench drawer. I have also had knives come back for the next sharpening with the sleeve on. I tell my customers if they throw their knives in a drawer to keep the sleeve on them to protect the edge and their fingers when reaching into the drawer.
Wonderful Video! Thank you for sharing your knowledge. I am very new to knife sharpening and I'm going to get the HF 1x30 to sharpen my carving knives. I'm planning on purchasing the angle guide, but it got mixed reviews when using with smaller carving knives. Just wondering if you have experienced any issues when using it on a smaller knife (2 1/4 or less)? Some of my carving knives are flat grinds, but with Helvie knives, you are supposed to strop at a slight angle. Most of the videos I watch where people are power stropping just freehand it. Do you think the angle guide is needed? Thanks for any info you can provide!
The sharpie method works as long as your bevel is the same on each side. However sometimes from the factory they are not the same.
Thats one reason why I generally like to do a minimum of a few reproofing stokes now since the new angle setter came out I have not been using the sharpie method much. I generally set the angle I want then do 80-600-1000 gritt on my CBN wheels the 80 stokes I monitor with my digital scope when it looks good I then go do my 600 and 1000 and I am done and in general it take me around 5-6 min a knife. It's been great
Paul, I know I’m coming late to this party, since this vid is a year old by now, but doesn’t the type of steel also determine what sort of compound you use on the strop? Looking at some of the exotic pocket knife steels, such as Maxamet: do the diamond emulsions work better than other abrasives in your experience? Thanks.

As far as training your competition, I just got in with one of the oldest groomers in the area (sharpening) and she said that she would be a great reference for me and said she's trained all the local groomers, meaning they all worked for her until they got good enough to leave and they left. She left her big building and transformed her garage into a small, one person salon to cut the overhead and to stop training the competition.
Also in a corny side note, i officially retired from Virginia Tech Police (early with less benefits) to move to Indiana with my wife, who makes better money. One of my tasks was providing armed security for the VT President, including home and away football games. In 2017 I escorted him to the FedEx Bowl, and we stayed on Alexandria so technically I worked as a LEO in your jurisdiction for a few days. Lol
Did get mine yesterday. While it has the same actual microscope (cable, lens, housing and focus wheel) as another version I have, this wa cheaper and comes with the screen, holder and more. Really happy with it.
I think this may have been your best video yet. I have watched it a couple of times now. Your sharpening and tool reviews have really helped me, but you have given me just what I was looking for in this video. I am in the process of starting a Sharpening Service here in Southeast England, about 1 mile from Bisley Shooting ground. My existing business (shooting related) is seasonal and I needed to come up with something that would work over the winter to even cash out flow, yet still give me the ability to work from home and look after the kids (wife works full time). I cook a lot and get about 2 weeks of good edge from my Henckels. I use wet stones so my process is dead slow. I started researching and found the Tormek T8. This machine is overkill for my personal knives so I decided I would sharpen for 'friends and family'. Then I came up with the idea of sharpening for local families that I have contact with through school pick up and drop off. There is a large 'Housing Estate' (subdivision) about 500 meters from me so I thought I would start there. I am waiting for my Toolker 1 x 30 to arrive from China (stuck in Netherlands). I received Kaplan's book for my birthday last week and have read it a few times. I validated some of my ideas which was nice, but has really started me thinking. There are a few sharpening services near me and they do mostly garden tools, fix mowers, and seem to do knives on the side. They are really cheap. There is a business in a different part of the UK started run by an American (Great Edge Ltd). The guy is really nice and very technical. He has a great web site that I was thinking about copying. He is on youtube as well. He offers 2 tier pricing, basic and premium, but doesn't explain the difference on the website. I suspect he uses a Ken Onion for the basic and a Tormek for the premium. I was planning to do the same thing, but after reading Kaplan's book I think I will just offer a single price point. Why make the customer choose? I should choose for them as they are paying me to do what is best for them. Here in the UK, the post office will not handle knives. There are just 2 courier services that will accept them and they are both expensive. I was planning to offer free pick up and drop off just like another local sharpening service (Surrey Sharpening). They have a 'minimum spend' that varies by distance on their web site which is really complex as they list each village and have a different spend for each. My local village is really poor. Young military families and retired people. Your are either under 30 or over 90 in Bisley. There is a village a few miles away where the minimum rent for a house is around $6000 per month. It is about 10 minutes away but I was thinking that I would start with my local village to get references and then advertise on the well off village down the road, offering a free pick up and drop off service. There are lots of restaurants and hair dressers near me, but after watching your video I think I will focus on families. Like you, I am retired and like to work alone. I had 16 staff in my Canadian business and millions of dollars in liability. Leasing 3000 sq ft of prime office space, etc. Living with that for years took a toll on my family. I don't want to go back to that. I am still trying to decide on pricing. I think I just want to make customers happy (like I do with my existing business). A simple price model has its advantages that will probably be more successful in the long run through customer retention, but I can't prove this. Thanks again!
