Three starters and a pasta dish and lots of fish, because at Christmas you always need it.
And if you don't follow Christmas, this recipe will be fine for an elegant and out-of-the-ordinary evening.
4 Michelin Stars are the minimum ....
The ingredients are all for 4 people :
1st Starter :
3 hectolitres of fresh salmon
50 g almonds
a few sprigs of rocket
Lemon juice
Garlic, chilli pepper, salt
Olive oil

2nd starter
500gr small squids
Some central red radicchio leaves
Balsamic vinegar
30 gr pine nuts
30 gr sultanas
Some fresh ginger
Chilli oil

3rd Starter
4 fillets of turbot (or grouper, sea bass or similar non-stuffy fish)
¼ red onion
Lemon and orange zest
A celery heart
chilli
Herbs
Chives
Sage
Tarragon
Mint
Some fresh ginger

Pasta
2/3 Grouper fillets, or other similar fish
400 g long pasta (preferably linguine)
400 gr of Lupini clams
2 anchovies in oil
Garlic
EVO oil
Herbs
Sage
Tarragon
Spearmint
Chilli
