MIDSOMMARTÅRTA | Swedish Midsummer Cake

Midsommartårta is a classic Swedish cake served on Midsommar. Midsommar, or midsummer in English (who could have guessed that), is a hugely popular and important holiday in Sweden (and some parts of Finland!).
This year, I will be enjoying a fairly small celebration. I am meeting up with some of my best girlfriends, making a total of 5 of us, and we will be celebrating with my friend and her family. I'll be making some Swedish classics like köttbullar (Swedish meatballs), Janssons frestelse (Jansson's temptation, an anchovy and potato casserole), and gravlax (cured salmon). Since it will only be a few of us, I wanted to make a cake that is simple but still very traditional.
This Midsommartårta is a classic one. The actual cake is sockerkaka, a classic Swedish cake reminiscent of American yellow cake. It is topped with a lightly sweetened vanilla whipped cream, fresh strawberries, and elderflower blossoms. It sounds really impressive, but honestly, it couldn't be easier to make. Whether you celebrate Midsommar or are just looking for a lovely summer cake, you and your guests will surely enjoy this cake.

Swedes love strawberries so much that they have two words for them; smultron are insanely delicious small wild strawberries, and jordgubbe is a arger domesticated strawberry. The first Swedish my wife learned was to call me her little strawberry 😂❤

I’ve been close enough to a Moose to know they stink to high heaven…and a nephew who lived in Alaska was stuck in his garage for 2 days because a tall mama did not want to get off the shoveled walk..luckily, he had a wood burning stove out there…BEAUTIFUL CAKE!
