shadowking *SPOILERS AHEAD* In the beginning when they go to kill present day Thanos on his farm, Cap is wearing the stealth suit. The suit you are referring to was in the future.
He actually does, never noticed that. I did some research and the reason he wore it was because Chris Evans and some other Marvel actor had a say in what their favorite suit for the character was. Sometimes they get a suit that reflects the same design, but in Captain America's case Marvel just let him use the Stealth suit since it wasn't destroyed and sort of matched the occasion. Chris Evans' Favorite suit is his favorite suit, therefore they let him use it. It didn't destroy the continuity, so that's another reason.
I really want it to, but I understand why he doesn't, it's a pain in the ass, especially with 50+ suits, especially with all the unknown suits in Iron Man 3

Cap wears the stealth suit briefly in the first act of endgame as well when the remaining team go to find thanos on his farm planet. Also the actor for 70’s Cap with the plastic shield was the brother to my high school’s football coach. We got to meet him once he was really nice. 😂
