When running docker/podman/OCI containers, a Mac is literally the worst choice. The way how its implement adds an extra virtualization layer. And AFAIK some sockets are not passed through properly. Add to that issues with volume mounting. Wanna try it, go for a debugging session with xDebug (PHP). Even windows does it way better since WSL2. I also recommend 2 or 3 screens instead of one. Or you may just whish to alt tab /switch virtual desctops constantly. For a mouse I recommend a "vertical" mouse in a size of palm. Helps against a crampy hand. If you like gestures, well just go for gnome 3. Load it up with the right plugins and go be awesome.
