great little build. i love how you talk through your reasoning for the choices you make. the tablesaw is the right call. if you try to joint the second edge on the jointer you can accidentally make a wedge instead. both edges will be square to the face but they might not be parallel with each other. the tablesaw's only job when ripping is to make the second edge parallel to the edge against the fence. you might want to try using a hand plane, scrub or fore plane, to flatten the top. it's as fast as a belt sander but it doesn't make so much dust all over the shop. don't need a mask or anything. a scrub plane will remove a lot more wood faster than a belt sander as long as the plane is reasonably sharp. scrub planes don't need to be nearly as sharp as a smoother though. a card scraper or scraper plane works great if the panel is already pretty flat and you just need to get rid of glue lines and clean up the joint lines.
