  • Dal simply means lentil. There are no specific ways to cook a dal but generally you have tarka dal, which is covered with spices fried in oil poured over it. There's dal fry, which is when you fry the spices, onions etc and add the cooked dal to it. Then there's dal curry which is cooked just like you make a masala curry but use dal as the main ingredient.

    INGREDIENTS - Serves 15 side dish sized portions
    oil as required
    hing Powder 1 tbsp
    Cumin seed 1 tbsp
    mustard seed (always black) 1 tbsp
    dried chilli to taste
    fresh curry leaves (don't waste your time with dried) 30
    onions 2 sl8ced uniformly
    garlic 2 bulbs chopped fine
    tomatoes 2 can (good quality
    (wash and soak these lentils together for a few hours to over night- longer they soak, quickerthey cook)
    black urid dal 1 cup
    shelled urid dal 2 cups
    mung/moon dal 2 cups
    Turmeric 2 tbsp
    Salt to taste
    fresh coriander 1 small bunch finely chopped

    Love daal. One of my favourites Steve. How long is it best to soak them for ?

      Small dal for about 3 hours ,but bigger like Whole chickpeas or chana, over night. I leave them a few days sometime if I don't get time to cook. Main this is its soft when finally cooked 🍳
