That looks delicious. I have to ask, who don't you invest in a well made stainless steel roasting pan without Teflon and bake your manicotti in the base. I use mine for lasagna, stuffed cabbage, roasting meats. It cleans up easily. Aluminum pans are wonky and not good for the environment.
