  • Manicotti is so easy to make, shells and all.
    For the shells: Water, eggs, flour, salt.
    A crepe pan or non-stick pan will work.
    Stuffing: Ricotta, mozzerella, grated parmesan or romano, (or both), parsley, egg, nutmeg, pepper. Add what you like.
    Sauce, and more cheese!
    Prepare and bake in the oven at 375 for about 20 minutes.

    This is the best video for crêpes and manicotti I’ve seen, basic is best- simple marinara and imported cheeses

    Locatelli Romano was our standard cheese when I was a youngin in Brooklyn.

      It’s my go to cheese also but use Parmesan for this. I use a lot more Locatelli

I know your recipes have got to be great if you got them from little Italian ladies, they know good food and their recipes are much coveted, as you explained. To me the story behind the food is almost as delicious as the food itself. It adds character and personality and makes it that much more enjoyable.
