The phrase for this soup in Italian is minestra maritata which means married soup. Served at Italian wedding receptions back in the day, as an aphrodisiac for the newly married couple to have lots of energy to consummate the marriage after they leave the reception.

Soup is the best! Always wanted to make this one, so we'll give it try. Don't forget to add the 4 cups of water to the recipe as it's missing from the written recipe at the time of posting. (4:34 half broth / half water - 4 cups of each)

Our family when making wedding or escarole soup dropped the meatballs in raw and they cooked as the soup was simmering
