    I just calculated the macros for this recipe. With all that HWC a serving comes out to 981 kcal. YIKES!!!
    Even if I cut your serving size in half that seems like an awful lot for desert if you’re eating it along with something else.
    Anything I can substitute since you’ve already got all that Xanthan Gum to thicken it?

    It’s been years since I have consumed miracle noodles, but it seems like the consistency might be more like tapioca pudding. And if that’s the case great. I love both.

    Just wondering, at the beginning of the video it says heavy cream, but your pouring in a can of coconut milk it looks like.... which is it supposed to be

    I don’t have guar or xanthum gun. I’m assuming it was used as a thickener. What can I substitute it with or is it a must have or can I just opt it out?

      Gelatin would probably work

      In my recent chocolate pudding (american eggless custard) I give options to swap out guar gum for gelatin, it works really well you just need to whisk the gelatin version after it has cooled. :)

    Do you guys treat the miracle rice how youd treat the noodles, you know rinsing and dry frying?

      No, I just follow the instructions on the packet, I rinse multiple times, boil briefly then rinse again.

      I prefer using the konjac rice because it avoids that issue, but I know that if you steam the riced cauliflower and then squeeze out all the excess liquid COMPLETELY, it won't have such a strong smell. Also, letting the pudding sit overnight helps a lot as well. :)

    Is the cauliflower rice, just blended cauliflower? Or does it need to be steamed/sautéed before going in to the mixture?

      Yes it is and I have the link to the type I use in the info box below the video. :) You can sub in xanthan gum instead, or use chia seed like Miquel Tv said BIT you will have crunchy chia seeds added to the texture. You can also try gelatin like I used in my keto chocolate pudding recipe. :)

      TPH Keto Desserts of psyllium husk would work too, right instead of the Guarm or xanthan gum?
      I have psyllium husk I don’t like the gums

    What texture do the Shiritake have at the end? Do they stay crunchy, or do they mush?

      Feels like rubber bands in your mouth or really thick jello. It's a miracle!

      Tho the texture might be OK for a desert like this, it's no replacement for rice

    Sure, this is lowcarb, but otherwise, it's not that healthy. The fake shirataki rice (yuck), the guar gum and all other gums, the large amount of erythritol, are bound to upset stomachs more than real rice (real rice + cauliflower) and some raw honey would. At least that is true for my case.

      Eugenia Loli Your point is true, however they’re not claiming that it’s healthy (or healthier than the original recipe). They just changed/substituted the recipe and the ingredients to suit the ketogenic diet.
