  • ** The bread making method of Kkuume is,
    Inspired by ‘no knead method’ that it has been mainly used by home bakers when making high hydration lean bread like Chiabatta, Baguette, Focaccia.
    And, I'm making soft and fluffy bread my own style and coming up with recipes **
    ---------------------------------------------------------------------------------------
    ♣ Oven
    Bake in 190℃ / 374℉ for about 22 mins
    ♣The pan size I used in the video 👉 loaf pan 22.5*10.5*9.5cm
    If possible, use a pan the similar size as mine and you'll get good results.
    When calculating the volume, if your pan is smaller than mine, proof it higher(high point), and if it is larger, proof it lower(lower point) than mine.
    ♣ Ingredients
    ** 1cup(250ml) & 1Tbsp(15ml) ** I wrote measuring cup measurement as a service, but I use and recommend ‘g’ measurement. *
    ▷water ±60g (±60ml) * must follow video, if your dough is thicker than mine(01:46), add more water.
    ▷milk 100g (100ml)
    ▷beaten egg 25g (25ml) * It's about half of an egg
    ▷instant dry yeast 5g (1+1/2tsp)
    ▷sugar 40g (3Tbsp+1tsp)
    ▷salt 6g (1+1/4tsp)
    ▷melted butter 20g (20ml)
    ▷bread flour 230g (1+1/2cups)
    ▷yellow corn flour 70g (3/4cup) *not cornstarch
    ▷corn kernel 60g(1/4cup)
    *If you don't have corn kernel, refer below Q&A

    I introduce Korean style corn loaf bread.
    As I said in the video. My mother loved corn loaf bread.
    She used to buy corn loaf bread not milk loaf bread.
    I made up this recipe thinking my mother living in Korea.
    Let me explain the taste of this bread.
    I can say it's kind of corn flavor milk bread.
    It's very soft and light texture.
    If you have corn flour, must try this Korean style soft corn bread. ^^
    With no-knead method, less effort, but can get amazing result!

    💡 Q: I don't have corn kernels at home~ Can I skip it?
    A: Yes, you don't have to. 🙂 However, the fermentation point will be different.
    When fermenting in a warm oven : not 2cm below the mold 👉 2.5cm below the mold
    Final fermentation : not 1.5cm above the mold 👉 1cm above the mold
    Since you didn't add filling, let it rise smaller.
    💡 Q: I have enough time. Can I ferment the dough slowly and enhance the flavor?
    A: Yes. Follow the below process. You can get enhanced flavor bread.
    :: Process ::
    1. Reduce the amount of instant dry yeast to (1/2+1/4tsp = about 3g)
    2. Set the folding interval to 30mins * folding * 40mins * folding * 30mins.
    3. After that, the process is the same. However, the second fermentation time will be longer. It is fermented so that it becomes the same 'state'(05:31, 05:40) as the video. (It will take about 40 minutes)
    NOTE) Because corn flour does not form well gluten + small amount of yeast, so the volume will be smaller.
    💡 Q : My kitchen is so hot. Is it okay to proof bread?
    A : Use very cold water and milk to decrease temperature of dough.
    💜 How to keep it
    Put it in a food container and store it at room temperature. It is delicious to eat within 2 days. Or, when the bread is fresh, it is frozen and then naturally defrosts and have it.
    If you already sliced bread, you can toast sliced frozen bread in a toaster directly. (Easy + Good!)
