We bought a ClonerAlliance Pro UHD 4K screen capture unit for recording video from screens. Useful for all sorts of screen capture. The unit has a HDMI in and out and records whatever is input. Recording is upto 4K 25fps or so. Any higher than that and it records the stream as 1080p (which is annoying). The Nintendo Switch outputs at 1080p, so it's no problem for this unit. The quality of the capture is great, no jittering or dropping. It records straight to a USB, so I was able to pull the USB stick and edit the files on my laptop using OpenShot video capture.
If you've not got Mario Kart 8, it's a great game and I definitely recommend it. Fabulous family fun! I'm racing on the top right, my wife is bottom right and the kids are on the left. We've not played for a while and therefore pretty rusty, but last time the kids were getting to the point where if I lost focus for a second they'd leave me for dust.
