I keep it as cold as I can, but if there's a problem, I sometimes add gelatin. For butter cream, butter should be soft but not too smooth. I also adjust the amount of milk I add depending on the season. Swiss meringue cream and so on I also feel difficult. So I make easy American cream. It's best you find a way to fit your environment in your experience. I hope my answer is helpful.
