    Tried the coffee frosting, it was absolutely delicious! Everyone kept going on about how good it was. Word of advice if you live in a hot climate; this will melt super fast and become a goopy mess if left at room temperature so make sure to keep it refrigerated!

      Hi i am from chennai, I made the chocolate frosting..... It tasted yum....... But started to melt immediately and fully dripped and the nozzle design also went off.... Dono wat to do. How to correct it

      @@bonitaiubire Hi Preetha, replace half butter with shortening. Something like Dalda. Here, in Canada, we get Crisco brand shortening. Hope it helps. 🥰

    I just made the coffee buttercream and it's hands down the best frosting I've ever tasted. I need to make more tomorrow to pipe on to the chocolate cake (your recipe) I also made. For those wondering ... 500 gm butter equates to roughly 4 1/4 sticks.

    Instead of adding water to melt the coffee granules, gently heat a few tablespoons of the condensed milk. Put the coffee granules in it and stir well until completely dissolved. Let cool. Add the coffee when you add the condensed milk.

      Can also do the same with the butter it then becomes infused with the coffee flavour melt a little mix in coffee fridge whip then add to the rest of your ingredients.

    This was an absolute life saver since I forgot to pick up confection sugar. And it honestly works so much better than the other frostings. Fluffy and holds shape. Just add vainilla extract if you want a regular frosting that doesn’t taste like sugar butter

    I tried it just right now. It was.... AMAZING!! I have been messing up on my whipped cream frosting for so long now. This gave me hope. Also, I was trying to find a recipe that doesn't use the powdered sugar because I hate that flavor. But, this is TOTES DELISH!!

    I am a silent admirer. I don't usually comment🙈 but this frosting has changed my life so I had to comment and appreciate your work. I live in india and it's generally hot here so whipping cream 70% of time doesn't get whipped and I hate American buttercream its way too sweet for my tastebuds but this buttercream is just perfect. It is as silky as swiss meringue buttercream and way less hassle. I can't thank you enough. Love you❤️

    This is a foolproof recipe. Works absolutely fine every time. For the coffee i like to use a coffee extract or a really thick coffee where its almost syrup just to reduce the amount of extra liquid but the condensed milk instead of icing sugar is going to be my go-to from now on. So much less mess and none of the insane intense sugar flavour you get from having to use so much icing to bind the butter. This also sets up really nicely in the fridge. The caramel is a great addition to an already strong coffee cake.

      @@saraysacabral6518 Why not save money? You can make it yourself,
      eee-zee, pee-zee! Boil a pot of water and reduce heat to an aggressive simmer (just below boiling). Submerge an UNOPENED can of Sweetened Condensed Milk in the water for 1 hour. Keep can entirely submerged under water during this process. After 1 hour remove the can from the pot and let can cool down til you can handle it comfortably, with bare hands. Open the can, et voila! you now have a can of Dulce de Leche! (believe it or not, the can never explodes while it's being heated).

    I made the coffee buttercream last week, and it was amazing! Smooth and silky with just enough coffee flavor, and stable enough to hold my rosettes! And the low sugar content of the recipe is just incredible. Thank you! I will try the cream cheese buttercream next time!

      @@samanthamahaso6598 Hi. The amount shown in the recipe, is a lot. I covered 15 cupcakes (and put quite a lot of cream on each) and used about half of the cream, so I had to freeze the rest. Also, I'm not a great piper, and my piping was not without adventures - one of the piping bags got burst, so some of the cream inevitably got wasted.

    One can NOT go wrong make these creamy silky smooth buttercreams.

    I tried American buttercream before and I couldn't get the consistency right. It was a mess to pipe. This was super easy and foolproof. My cake not only tasted good but looked good as well !

      The only icing I learned to make growing up was American and I can never eat any of the cakes I make because it's too sweet and I can't handle so much sugar. This looks like it is lighter and smoother. How did you find it as far as being sweet but not too sweet?

    My mother used to make a chocolate cake with a similar icing. It was just butter, granulated sugar and whole milk. Took her forever to get it to come together but it was, and is still my favorite kind of icing. So smooth and buttery. 🤤

    Hello, I have several questions about this:
    1. Is it very important to follow the length of each mixing? Because I saw somewhere that in this recipe, you can "undermix or overmix" it resulting in a watery/soupy consistency or separations.
    2. I read that shortening has more fat but less flavor than butter. Does using the recipe for hot climates, i.e. half butter and half shortening, results in a more different flavor of buttercream icing?

    They look amazing!!! Does the sweetened condensed milk stabilize the buttercream frosting? Can it stay outside on a warm summer day for a couple hours or is it better to keep refrigerated or at room temperature until ready to serve?

      @@CupcakeSavvysKitchen Butter would hold a couple of hours unless the temperaturen are above melting point, the condensed milk can stay opened in the countertop without spoiling so it should be fine for a couple of hours without fridge too?

      No it doesn't melt because I used to make with only butter and icing sugar and it never melt in high temperature also so I think it doesn't

      These can be whipped up in glass or plastic without any issue 🌈
      You are probably thinking about meringue based frostings. You whip egg whites in a glass or metal bowl (copper is best as it lends an ion to the egg white which helps them stabilize but that a long story 😝) bcuz any fat (egg yolk, butter, oil) will prevent the egg whites from forming. Plastic, even having been washed, can hold onto fats and could potentially be disastrous for your meringue. So it’s always best to whip egg whites in gloss or metal bowls. Hope this helped 🙏🏻🙏🏻

    Hello I’ve been following your recipes for a while and they are great!! I’ve not tried this recipe yet but I have a few questions.
    1) does this butter cream taste like traditional butter cream? And
    2) instead of using molten chocolate can I use unsweetened cocoa powder? As I feel the extra liquid will make the frosting a little runny as I live in a hot country.

    These are great, thanks! Question: You know how when boiled, sweetened condensed milk becomes caramel? Would that work in place of caramel pour? Or could you use that sweetened condensed milk made into caramel chilled + the butter ?

    Most frostings are overly sweet and somewhat gritty when made with confectioners sugar so this one is very appealing to me. I’m going to try the caramel.

    This was very easy but I had to put a few tablespoons of icing sugar into it to get it to stand up. Otherwise it was beautiful on my caramel apple cupcakes!

    This frosting omg is sooooo good! Rich creamy and if you follow the measures and tip properly it is one perfect buttercream. I made the one with white chocolate - it was amazing.
    For Indian climate please consider doing it in an air conditioned room. The butter being cold yet soft is very vital.
    It is silky, creamy, rich, u will keep licking the frosting... To me this is even better than ganache...

      Can you substitute half the butter for shortening to help stabilize the frosting in tropical climates?

      But my icing was buttery and dense.... After i refrigerated my cake the icing was hard because of butter.... Why wasnt my icing soft and non buttery.

    Great recipe and I would love to try the caramel one.. I have couple questions , why did you use the stand mixer instead of hand mixer like the 2 previous ones and do we need to use chilled or room temperature condensed milk .. Many thanks to you 😊

      There's no need for dulce de leche., Dulce de leche is boiled condense milk. You just boil the can long enough for it to cook the milk.

    I made this today! It was very good.
    Mine turned out a little too soft, and a little too salty, but that was totally my own fault because I used salted butter instead of unsalted and I think I over-softened my butter to start with. It still worked really well for a home birthday cake, and everyone was pleased. We used Nutella for our flavoring. What a hit!

    May I ask if these buttercream are to be stored in the fridge only? Will they melt in the room temperature after frosting on the cupcakes as I prefer to keep cupcakes at room temperature :) Also for how long these buttercream will last for (if not freeze them) xx

    I tried the coffee recipe, definitely add in more coffee for more flavour. I also ended up adding more sugar because it couldn’t really taste anything but the butter. A good recipe though. The condensed milk gave it a great texture.

    This looks so good. I'm going to try this when I get a hand mixer, and find some butter, condense milk and chocolate. The shelves in my local markets are bare.

    I made the chocolate today, & I agree it’s definitely better & less sweet, but maybe a drop to Butter forward? ( if that’s a thing) so I added another 1/4 of chocolate, & that helped. Still awesome

    These look so smooth and creamy ... you can cook condensed milk in tin to make a caramel ,, so on the last cream couldn’t you use that instead of adding the extra caramel ...
