Pan seared squid traditional spanish style

  • A classic and very simple spanish seafood dish.
    Ingredients:
    - Squid (1)
    - Garlic (3)
    - Olive oil (to taste)
    - Cayenne chilli small dry hot chili (1)
    - Brandy or Cognac (1/2 glass)
    - Salt to taste)
    - Black pepper (to taste)
    - Paprika -sweet or spicy, to taste-. (1 teaspoon for dessert)
    - Water (half a glass)
    - Fresh parsley (to taste)
    Garnish: Lettuce, onion, roasted red pepper salad, salt, pepper, vinegar and olive oil.
    Preparation:
    - Clean the squid from viscera, feather, mouth. I like to leave the skin on it but if you want you can remove it.
    - Separate the tentacles and the siphon.
    - Make a few cuts to the squid -only on one side-.
    - Peel and chop the garlic into small pieces.
    - Put a frying pan over high heat with a little olive oil.
    - Add the garlic, the chopped cayenne pepper and the squid.
    - Let the squid brown on both sides.
    - Pour in the brandy and set it on fire to remove the alcohol.
    - When the fire goes out, season the squid on both sides.
    - Remove the squid to a plate.
    - Add the paprika to the pan and before it burns, pour a little water, letting it evaporate a little to obtain the sauce.
    - Make the side salad.
    - Serve the salad with the squid.
    - Add sauce to your liking and a little chopped fresh parsley.

    Victor, thanks a lot for the video and explanations, the squid was very tasty and soft (I used frozen squid)! I didn't make the sauce though, the garlic was too burnt and the pan was quite dry at the end.

    Nicely done even though no spoken instructions. But then again who needs the spoken instructions if it's already on the screen. Love it. Would try your pan-seared squid this weekend. Read the comments below and found out it's called grilled squid in Spain.

    Id love try this tonight but don't have brandy
    Is there anything I can substitute the brandy with from the following ?
    Bourbon,Scotch,White Rum,Vodka,white wine - Sauvignon Blanc, ? These are the only things I have at home at the moment can I use any as a substitute ?

    i enjoyed the video and it looks delicious but is it traditional grilled or traditional fried? i envisioned a grill. was the original technique adapted to those who cannot grill outdoors or does grilled=pan fried? not trolling, legit question

      It is perfectly appreciated when done. Don't be afraid to do it. I can't tell you an exact time because it depends on the size of the squid and other factors.
