Looks great and your time is excellent for tender calamari, clearly explained too. I would serve a little Ali Oli ( garlic mayo ) with the chips or yellow rice if you’re having. We do this in Spain with yellow rice using saffron powder to get the colour. The rice i cook in a fish stock just using a cube to taste. 👍

The Spanish and i suppose Italians too don’t over spice their foods preferring the taste of whatever product they’re cooking, I’m from South Africa where spicing is important including different curries, i myself being from Cape Town prefer Cape Malay style curry which is more aromatic as apposed to Durban curry which is spicy and hot. Spain in the 20 odd years I’ve lived here has also learned from people from all over the world who have immigrated here and opened restaurants. This happened in South Africa too where the food many years ago was based on Dutch and some English too both those days were very plain cooked foods. I being Spanish now and having Spanish family from before leaving SA have learned to also enjoy foods lightly spiced but still love my spicy dishes too. The dish above is simple to make but very few spices still i will eat this any time it’s put in front of me and thoroughly enjoy it.
Italian food is, as you put it, disturbingly low on ingredients most of the times, even by continental standards, but boy oh boy, the flavors? Out of the world. It's one of my top 3 favourite cuisines all over the world.

Thank you for your question! If you use a non-stick pan it won’t stick. Trust me! Also If you don’t have a non-stick pan then you’re right just slightly oil the calamari 🦑. Make sure the pan is piping hot. Have a good day
@BESTCHEVAMOS Calamari taste wonderful! Even better off a charcoal grill. The tentacles are really nice and crunchy. The calamare are great as long as they are fresh and you don't cook them too long.
