Onion -1/4 cup
Capsicum -1/4 cup
Green chilli-2
Schezwan chutney -1 tsp
Red chilli sauce - 1/2 tsp
Oregano -1/2 tsp
Chilli flakes - 1/2 tsp
Salt to taste
Cooking oil- 3 tbsp
Dahi Aloo
Boiled potatoes - 4
Onion paste - 1/3 cup
Curd -2 tbsp
Cumin seeds -1/2 tsp
Turmeric powder -1/2 tsp
Red chilli powder-1 tsp
Coriander powder -1/2 tsp
Cumin powder-1/2 tsp
Black pepper powder-1/4 tsp
Garam masala powder -14 tsp
Coriander leaves
Cooking oil-2 tbsp
Salt to taste
Kurkure Aloo fry:
Potatoes (chopped)- 4
Cumin seeds -1/2 tsp
Dry red chilli - 2
Turmeric powder -1/2 tsp
Salt to taste
Cooking oil- 4 tbsp
No Onion No Garlic Aloo sabzi:
Boiled potatoes - 4
Cumin seeds -1/2 tsp
Ginger paste -1/2 tsp
Tomato paste -1/2 cup
Turmeric powder -1/2 tsp
Red chilli powder -1 tsp
Coriander powder -1/2 tsp
Garam masala powder -1/4 tsp
Salt to taste
Cooking oil- 3 tbsp
Coriander leaves
Aloo bharta:
Boiled potatoes -4
Cumin seeds -1/2 tsp
Curry leaves
Green chilli-2
Onion-1
Tomato-1
Ginger garlic paste -1/2 tsp
Turmeric powder -1/2 tsp
Salt to taste
Cooking oil-2 tbsp
Coriander leaves

I would like to add one more. This can be had in upvas too.
Boil 3-4 potatoes. Peel & chop into pieces. In a kadhai, make a tadka of ghee, jeera, slit green chillies. Then add the potatoes, salt, a little sugar, chopped green chillies. Mix well. Add coarsely ground roasted groundnuts. Add chopped fresh coriander. Mix & stir fry on low flame till potatoes get a few red spots. Put off flame. Add lemon juice & more coriander. Serve hot.
