  • Bobby Flay is Emmy Award-winning food TV pioneer and acclaimed restaurateur. Catch him Tuesdays on the Food Network with Bobby's Triple Threat, and then again on Thursdays with Beat Bobby Flay. He also has a cat food line called Made by Nacho and, of course, Bobby's Burgers with multiple locations across the country. But how is he with spicy food? Find out as the O.G. American Iron Chef taps into his chili pepper-infused culinary roots and takes on the wings of death while discussing New York Times restaurant critics, the evolution of Food Network, and cooking for Drake.

Great interview. He's a good dude and I speak from personal experience. I actually called his restaurant (in the early days of Food Network when he was doing "Grillin' and Chillin") and he was there. I actually spoke to Bobby Flay on the phone because I was considering changing careers and becoming a chef after I had already invested time in my current line of work. As odd as it sounds, I wanted his professional advice. He took the time to talk to me and broke it down by asking how much money I made at the time at my current employment. He said it would take about X amount of years to make that amount of money again as a chef. It seemed like an eternity so I decided against it. In retrospect, I probably should have gone for it.

As they keep talking about how food TV hit the main steam, I agree with Bobby Flay that Iron Chef was a very big part of it-- because competition demands a story to be interesting. And this story of the competing chefs is acknowledged at every point in the battle, the chairman recognizes the history of both chefs, we learn more about their background and their strengths and weaknesses through Alton Brown's commentary. We took something that was very frequently shown to us as being mundane raised up to the level of serious competition and given the gravitas thereof.
Humans have been making and loving and comparing food for as long as we've had the ability to taste, it's part of the reflex to share a new food with a friend; "Look what I found!". Add in the creative components, where we acknowledge that food is creative and artistic, and we step into the domain of things that contain love. "I made this for you" is one of the most special things an artist can say to another person, and food is one of the things were allowed to vocally appreciate and say back " This is amazing! I feel the love"
We've been seeing more with food and storytelling, such as the show Somebody Feed Phil, where the lens of food is used to explore history and culture of places all over the world. Food is universal, and sharing food was likely the first pro social communication our species picked up as we started living in nomadic groups waaay back in the cave drawing days. Before we spoke, we broke up fruits for our young and chewed tough meat for our elders. Before the word Love was first spoken, people were sharing it as food. Its a long story, and I think its great that more folks are exploring that space 😊

22:49 Flay talks about how he doesn't like to say his own name, even though it's the title of the show.
What I like best about Bobby Flay is that he's a successful restaurateur, and maybe the quintessential TV chef in the US over the last 30 or so years, but at the same time he's dedicated hundreds of hours to featuring less well-known chefs and their talents.

I took a friend there and when he tasted it this shy dude I mostly knew from DND suddenly opened up about his army brat childhood and living in Italy as a teen and how this gelato took him straight back there because it was just as good.
