How to make Fluffy Brioche Bread

* 1 1/4 cup(296 ml) warm milk 110 degrees Fahrenheit
* 1 cup (200g) granulated sugar divided
* 2 tsp (7g) dry active yeast
* 7 1/4 cups (870g) bread flour spooned and leveled off with a knife
* 1/2 tsp(3g) salt
* 6 eggs (+1 egg for egg wash)
* 1 tsp (4.93ml) vanilla extract
* 1 cup (227g)unsalted butter softened

📃📄📃📄📃INSTRUCTIONS 📃📄📃📄📃📄
1. In a glass bowl or large measuring cup, combine milk, 1/4 cup sugar, and yeast. Leave this mixture in a warm place for about 20 minutes. Once it becomes frothy, give it a quick stir.
2. Place 7 1/4 cup bread flour, 1/2 teaspoon salt, and 3/4 cup granulated sugar in the bowl of a stand mixer. Then pour the warm yeast mixture into the bowl.
3. Crack the eggs into a bowl and give them a quick whisk just to loosen them. Add the beaten eggs and vanilla extract to the rest of the ingredients in the mixer bowl.
4. Using the hook attachment, beat the dough until it begins to come together.
5. Cut the 1 cup of unsalted softened butter into slices and add it to the dough. Continue kneading the dough at high speed for about 10 minutes or until the dough is smooth and elastic. If the dough isn't coming together well enough after 15 minutes, add an additional 1/4 cup flour.
6. Remove the brioche dough from the mixer and shape it into a ball. Place it into a bowl greased with oil. Then cover with a cheesecloth or plastic wrap and leave in a warm place for 1 hour or until it doubles or triples in size.
7. Once the dough has proofed, divide it into two equal pieces. These two halves will make two loaves of bread.
8. Starting with one of the two dough halves, divide that half into three equal balls. Roll those three balls into long strands.
9. Begin crossing over the three strands in a braid-like fashion. Once you get the end, pinch the dough to seal the braid. Repeat these steps with the other dough halve. (If you don't want to do a braid, just place the 3 dough balls on the loaf pan.)
10. Butter a loaf pan with unsalted butter and place the braided dough into the pan. Cover with a cheesecloth or plastic wrap and let it proof in a warm place for 1 hour or until it doubles in size.
11. Once the dough has proofed, brush with egg wash (1 beaten egg + 1 tsp water). Bake at 350 degrees Fahrenheit for 35-40 minutes until golden brown.

thank you for including the grams in the recipe! We always use measurements like cups in the US, but I learned from making brioche once a couple years ago that all flour is not created equal. I tried measuring in cups and my bread turned out super dense. I was told to try measuring in grams next time. Night and day! I try to measure everything in grams now!

I'm in a temperate climate, and used more than a quarter cup more flour to get the dough to come together. Other than that, THE BREAD TURNED OUT GREAT! Highly recommend!!! 👍

Love this recipe! I had to add approx 3/4 cups of bread flour during the last spin and a tbsp when shaping into a ball right before proofing. The wetter dough was perhaps due to the hot weather and higher humidity in this part of the world. Overall the taste and texture were superb!

made this today for french toast for mother's day tomorrow. tastes absolutely delicious. my only comments are that it nearly burnt up my kitchenaid mixer because the dough was sough heavy. I wish you had weight measurements for the flour because i think i added a bit too much, but other than that, i think it's going to make a great brunch. i also want to mention that this made waaaaaay more bread than i was expecting. there's no way these loaves would fit in my loaf pans, so i just baked them on a cookie sheet.

I also had the same issue with my kitchen aid. Beautiful piece of equipment but it seemed strained😢. It did mix the dough well though. Twice in one day.
Added cinnamon and sultanas and zest of satsumas. Lovely
Add ins per preference are always welcome :)
I have 2 KitchenAid Stand Mixers but from reading the other comments, I don’t think I would use them for this particular recipe.
I’ll still try it one day but it will have to be done by hand (or maybe if I decide to add in a Bosch Universal Plus Stand Mixer alongside my 2 KitchenAid Stand Mixers).

I have made this brioche bread recipe using a KitchenAid mixer and I have had great results from it.
I start the dough in my kitchen aid but finish it off by hand. My mixer doesn’t like heavy dough

Hi. I love your recipes. I tried to locate the Bosch mixer but it is not available at Amazon & they cannot say when it will. I really find it more efficient than the KA mixer.

I use saf instant yeast brand will that be good for making brioche .. I made brioche already and when I proof it I got 3 times bigger but when I baked it was raw in the middle

Hi, my oven has it's own defaulted proof setting so it doesn't give me the option to change the temperature. Most people use about 90-100 degrees F. For the time you can just put in the time recommended in any recipe. Hope that helps and I hope you love this brioche bread recipe :)

Hi, it sounds like you have a different oven than me. I place the bread on the center rack and I turn it on you conventional bake. My oven does not have an option to turn it on the top or bottom.

Hi! :) Yes you can definitely divide the recipe in half. We make half the recipe all the time. But for some reason I find that I always need a little more flour when I do this.
So after some reading, I thought I'd come make an additional comment. This isn't actually Brioche but a very similar bread called Portuguese Sweet Bread. This bread is what Hawaiian Sweet Rolls are based on. Great recipe nonetheless!

When I make italian round loaf bread and put it in the oven to rise, I just turn the oven light on & that generates enough heat-just a tip
