I make bread every day. There's nothing quite like homemade bread.
Yes! I try to make a 1.5 lbs loaf weekly for the family (alternating between white and whole grain varieties). You made brioche look easy to make! If I master it, then I’ll add it instead of regular white bread once a month 👍.
All kinds. At home an I used to work in a bakery. It's been awhile since I saw a cake yeast that big, I would have so much fun trying to use that up an sharing goodies with friends an family.
I grew up in a town in Peru. I loved watching my grandmother and her sisters bake five or six times a year. It was a monumental effort. The brick oven had a diameter of at least three meters. My grandfather died in April 1985, and a year later the big house was sold. It was the end of an era. Everything was done by hand. The day started at dawn. It ended at midnight. Writing this lines sweetens my heart. My grandmother and her sisters, Mavila and Clorinda, as well as my mother would have marveled to watch Martha's baking, her oven, her elegance. They worked so very hard; there was no electricity. I would like to honor their lives. There has always been a longing for those sweet buns, breads, sponge cakes, etc. All in my memory taste gloriously. Thank you Martha, watching you bake and give the measurements in pounds, helps elicit those sweet old memories.
I got my first Kitchen Aid when my daughter was 11. When she graduated from college 10 yrs later I gave it to her and bought myself a new one. The 33 yr old one still works and so does my 22 yr old. Both were used hard. My secret is never run your mixer so long that the motor gets hot. Kneading processes can do this so I stop the machine frequently, clip a towel over the top of the bowl and let it rest for 15 mins. I will do this at least 4 times. Works like a charm and your machine will last a LONG time.

I'm already a baker/pastry chef but watching Martha always brings me back to when I was a young girl pursuing my dreams. Martha was one of my biggest influence on why I wanted to be a baker... her Martha Bakes videos always brings warmth to my heart. ❤️

I do alot of baking but never Brioche. I made my first loaf, wow. I did use my mixer and it made my life much easier. It is a labor of love but so worth it.

Next to the good quality ingredients it is the time for proofing and resting that makes the defining difference in the wonderful bread that comes out of the oven at the end. In Sicily they serve ice cream in brioche. So decadent and very delicious!
Use a wooden stick to mix yeast and warm the bol. Metal decrease the temp of the water.

I would love to try this recipe of brioche bread. My question is if I don't have fresh yeast, can I use instant dry yeast? If so how much?
Yes. 1 ounce fresh = 28 grams
Use one third, 10 grams, or 2 teaspoons
Thanks Martha. They turned out beautifully. I have a convection oven but is is gas. So I think the oven runs hotter. Next time the only adjustment needed is lowering the heat setting. Other than that it was a really good first experience

great technique, looks lovely! A baba dough (and a savarin dough while we're at it) are rather different from brioche doughs, though ;-) at least according to classical french cuisine

This was the first time I’ve made a brioche dough and it was fantastic - I divided the dough and made one as a loaf. With the second portion I improvised by rolling it out into a rectangle, made a cinnamon, brown sugar and pecan crumble and made into scrolls. Great recipe!

you can freeze this kind of yeast. They will be ok. Just add sugar when thawing.

Has anybody been able to make this without the bread machine maker/mixer. I don't have 1 but so want to try this dough
I did it with a hand mixer. It's a lot of work, because you really have to kneed the dough well. Mine did look the same as in Marthas video at first, than lost some butter during the raising time. I was quite worried. But I finished the recipe anyways and it turned out well (^.^)
i wish i found yours first because i tried another recipe and didnt rise like yours next time i will make it your way
