Hi from Melbourne Australia, I made your apple fritters yesterday for my family and they where amazing. I did not have castor sugar so I used soft brown sugar and I added cinnamon - my family loved them. This recipe has solved an issue as one of my three daughters does not eat banana so I divided your batter into two and made a batch of apple fritters and also a batch of banana fritters. Thank you for these amazing posts. I was a bit sceptical using cup measurements as we use metric and weigh our ingredients, I have converted your recipe to metric.
My granddaughter and I just made these (all I did was chop the apples). She has become a big Martha Stewart fan. She followed the recipe plus added some cinnamon and nutmeg because she loves those with apples. They were so delicious! We loved slight crunch of the apple and the delicate batter with just a hint of the spice. Thanks, Martha!
For the non-professionals without a cutter: place a glass on the dough bottoms up and cut around it with a knife. :) I hope the students got donuts, too. They looked just perfect. ♥️

Were those not culinary students witnessing Ms. Stewart’s culinary acumen? Perhaps they may not have the funds required to buy professional implements for cooking. Should that stop them from making anything? It is not wise to leave out that Ms.Stewart has wealth great wealth at her fingertips, in addition to possibly having created professional tools and selling many tools used in cooking. Sometimes the road to professionalism for students doesn’t always mean having funds to buy, often times, expensive professional equipment/tools. I know because I once was a culinary student. Not only that but in the 50’ and 60’s for 33 years my family owned a restaurant. We improvise extraordinarily with professional results and exquisite taste without “professional” tools. There are some hacks in the kitchen that often don’t require professional tools if one is smart. A great answer for the young man would have been to use a dipped in flour jar or jar top equal to the size she was using. Another would have been to use the tools the good Lord above gave you to make a round ball with your hands and flatten it.
This is such a great video! Attending the CIA was my dream but it didn’t happen (went to college instead). Seeing you teach these culinary students and inspiring them is so inspiring itself and wonderful to watch :) Also your the way you speak and teach is very comforting.
As a young mom doing unconventional things with her children my mom would use a glass jar and back then a water jug cap (they used to be metal) to cut out her donuts. Use what you have until you can get better. Dont be intimidated by people's limited pov or the task at hand. Make WHATEVER you want!

I was only there for a short time , as we were an Australian family , living in the US while my dad was studying . I can’t believe the likeness ~ I wonder if they are related ?! 😃
I dont think you can cause the dough is kinda sticky and you cant pull it from the glass without ruining it I have had that issue with other sticky doughs and I asume thats the case here
Made Donuts and i followed recipe . i did not have any nutmeg and I did the yeast wrong because they didn't come out as fluffy as I wanted. But my kids said they were okay. I'm a construction business owner but I secretly want to be a pastry chef. Can't let the guys know LOL.

It's always interesting to notice how Martha's television series change over the years, like the set. I can't recall which series she did that had it but the kitchen area featured some glorious green Jadeite kitchenware that was so pretty in the background.

Martha, I’ve followed your cooking shows for years and feel as if we are old friends. I’ve recently tried making apple fritters but I’m having trouble with the glaze. I’ve tried glazing a cold fritter, as well as a warm fritter, and each time I end up with a fritter that is soggy and sticky. I would appreciate any suggestion you could give so that I can end up with a nice hard glaze. Be well.
Not Martha here, but what kind of apples are you using, how much juice do they add and how firm is your glaze? And how high is the air humidity where you live? Maybe the glaze draws moisture from either the fritter or the air. Or your glaze could a little too thin.
@@TheNinnyfee I used gala apples as recommended and the glaze was on the thick side. I don’t remember what the humidity was on the day I baked. I know humidity plays a part when dealing with egg whites I didn’t take into account it could affect making fritters. Thank you so much for answering my question.

The Polish way is to use either a glass you drink juice out of or a shot glass (for smaller projects) instead of a cutter.

I never cut it, I just turn it clockwise and back (just a little, you don't make a whole circle) few times and eventually it cuts through.
