1. Imperial Cuisine Duck

The caul fat wrapped de-boned fish was interesting...you do not see caul fat in kitchens last 40 years...
The steam ovens were interesting...the duck was a lot of work. A lot of steps for that table side carving...it must be good for Chef to put his reputation on it...

I had to de-bone 100 chickens a day at Japanese/French place I worked...you get good at it after a few thousand..ha ha..
