  • I am so excited! I can't believe August is already here. This will be a crazy busy month but it is so rewarding when it is done. I have already been canning some things but now I will go into full blown preservation mode during the month of August.
    I have learned so much from doing this challenge. This is my third year and I am having to add shelves to my larder so that I can store the food I am planning on preserving. The first year There wasn't a whole lot but I was so happy with what I had done. Last year was amazing. This year will hopefully be able to help us feed our family through three months during the winter.
    I am so thankful to Jessica ‪@threerivershomestead‬ for making this challenge. It is amazing all the work she does all year long. She is definitely my canning hero!
    Here are the recipes for some of my favorites...
    Canning Sausage Potato and Kale Soup (This is the link I used but they have changed the amount of potatoes. My printed recipe says 9 cups of potatoes and another recipe I saw says use 7 cups. You decide.)

    Fire Roasted Tomatoes (Homemade!)

    Glazed Carrots (I used honey instead of brown sugar)

    Homed Canned Chipotle Black Beans
    2 lbs. dried black beans
    To prepare beans…
    Sort, rinse, cover with 3 in water and bring to boil. Boil 3 minutes.
    Cover, and let sit for 1 hour. Drain and rinse. Put back in pot and bring to
    boil when ready to can. Fill the jar leaving 1½” + headspace.
    Or...soak for 20+ hours and cover with water and cook for 30 min
    then fill jars leaving 1½” headspace.
    1/2 t. canning salt per pint jar
    1 T. fresh cilantro per pint jar
    1 T. fresh lime juice per pint jar
    1 fresh garlic clove per pint jar
    1 chipotle in adobo per pint jar
    Add water or stock to 1" headspace
    Use a tool to get air pockets out after liquid is added.
    Wipe edges with white vinegar.
    Pressure can quarts for 90 minutes, pints for 75 adjusting for altitude as follows:
    Weighted gauge Dial gauge
    0-1,000 ft 10 11
    1,001-2,000 ft 15 11
    2,001-4,000 ft 15 12
    4,001-6,000 ft 15 13
    6,001-8,000 ft 15 14
    8,001-10,000 ft 15 15

    Last year, I was using pumpkin and butternut squash to make gnocchi. They turned out absolutely divine!

      They were absolutely scrumptious 😋! Just make sure you get most of the moisture out of your canned squash first so you don't have to use more flour than necessary.

    I will be doing the Every bit Counts Challenge to on my channel. I love watching what everyone preserves, sometimes you can get great ideas! I have 7 chicken carcases waiting to be turned into bone broth and canned!

    Love the risers!! I need this! Also maybe drain the water off that butternut squash and make some pumpkin bread or a pumpkin pie out of it!

    Take a batch of your older jars and can plain water in them,if they break it's only water not actual food .

    Hi there. For your fire roasted tomatoes are you putting them on a pan of some sort on the grill or directly onto the grate? Also, would you please share your processing method and times. Thanks!

      Hello Mel, I put them right on the grate of the grill and have a bowl sitting next to me because some will get done before the others. I also cut them open before I grill them and try to take out any seed or wet parts.
      You need to add 1 tablespoon per pint or 2 tablespoons per quart of lemon juice so that you can water bath can them. You can also add 1/2 teaspoon salt per pint and 1 teaspoon salt per quart.
      Water bath for 35 minutes for a pint and 40 minutes for a quart.
      I just take a knife and chop them up coarsely before I put them in the jar. Leave 1/2 inch headspace.

    Use your sqash and applesauce to make dehydrated leathers. Add cinnamon flavors. Even pie seasoning

    I enjoyed seeing your storage area and all your canned food. Wow, what a difference the zinc made for the green beans! Thanks for that amazing tip! This fall, I'm planning to can a few pumpkins. The store-bought pumpkin puree has gotten so expensive it's impossible for my penny-wise heart to buy it off-season, but I love it in everything, lol. Have a blessed Sunday, my friend!

      I said I would never can pumpkin again, but on her RUclips channel, Ruthann Zimmerman cans pumpkin purée. She just makes sure it’s not too thick. So I might do that. She just puts it in a strainer with cheese cloth and lets it sit to drain all the liquid out and then it’s thick like the one in the can from the store. You might look that up.

    I need to try that Italian Sausage Seasoning from Lilac Lane Amish Store.. So you know if they ship it? I've tried others and haven't yet found the taste of my favorite as I think most are way too light in the 'Italian' part of the seasoning but I LOVE good Italian Sausage. Too much hard grisely bits at the big box store. (I keep thinking they must grind up the hog noses to stretch the 'meat'!) .LOL. My favorite at Tampa/Florida State Fair was Italian sausage grilled with green peppers and onions on Cuban Bread.. Boy you brought back some great memories! I will need to try that Zuppa recipe for sure. I LOVE soup.Tell Mark those risers were not level and I knew he liked things done right so I thought and thought why - then realized that larger bottles could fit on both levels and you liked to keep them sorted by food type rather than just size so it made perfect sense to have more room for shorter rows on both levels - he is one of those rare 'keepers" for ingeniousness and pleasantness. Always there for a fun remark. Hey maybe that is where his name came from - Mark and remark. LOL.

      Hi Mary! Those Italian sausages you described are making my mouth water!
      The seasoning was very good! It was a little salty but I figure I can just not salt the soup and cut back on the seasonings a little. 😁
